Description

A simple, delicious 3-ingredient tofu pasta recipe that uses silken tofu and all-purpose flour to create fresh homemade noodles. These soft, tender noodles are quickly boiled and tossed with your favorite pasta sauce for an easy vegan meal ready in just 30 minutes.

Ingredients

For the Pasta Dough

  • 2½ cups (300g) all-purpose flour, plus more for dusting
  • 10 oz (275g) silken tofu
  • ¼ teaspoon salt

For Serving

  • Your favorite pasta sauce (marinara, garlic butter, pesto, etc.)
  • Vegan parmesan (optional)
  • Fresh herbs (optional)

Instructions

  1. Blend the tofu: Add the silken tofu to a high-speed blender and blend on high for 30-60 seconds until completely smooth and creamy with no lumps, resulting in about 1 cup of smooth tofu puree.
  2. Mix the dough: Transfer the blended tofu to a large mixing bowl. Add the flour and salt. Using a wooden spoon or your hands, mix together until a shaggy, rough dough forms.
  3. Knead the dough: Transfer the shaggy dough to a clean work surface. Knead for 3-4 minutes until smooth and elastic. If sticky, add 1-2 tablespoons of flour at a time until workable but still soft and slightly tacky.
  4. Rest the dough: Shape into a ball and place in the bowl. Cover with a damp kitchen towel or plastic wrap and let rest at room temperature for 15 minutes.
  5. Boil water: While the dough rests, bring a large pot of salted water to a rolling boil.
  6. Cut the noodles: Lightly flour a large baking sheet. Cut the dough into bite-sized pieces and place on the baking sheet. Toss with flour to prevent sticking.
  7. Cook the noodles: Add noodles to boiling water in 2-3 batches. Boil for 3-4 minutes or until they float to the top and are tender. Use a slotted spoon to transfer cooked noodles to your prepared sauce.
  8. Toss with sauce: Add all cooked noodles to your prepared sauce in a large skillet. Toss gently over low heat for 1-2 minutes to coat evenly. Add pasta water if needed to loosen the sauce.
  9. Serve: Divide among bowls and garnish with vegan parmesan, fresh herbs, or a drizzle of olive oil. Serve immediately.

Notes

  • Use silken tofu for the smoothest dough texture.
  • Keep the dough slightly tacky but not sticky for easier handling.
  • Resting the dough helps hydrate the flour for tender noodles.
  • Cook noodles in batches to prevent sticking.
  • Add reserved pasta water to adjust sauce consistency if needed.
  • Any favorite pasta sauce works well with these noodles.
  • Optional toppings like vegan parmesan and fresh herbs enhance the flavor.
