Description

Aloo Idli is a delicious variation of traditional South Indian idlis made with rava (semolina) and a flavorful potato puree. This savory steamed cake is perfect for breakfast or a snack, featuring aromatic spices and a soft, fluffy texture.

Ingredients

For Potato Puree:

  • 1 potato (peeled and roughly chopped)
  • ¼ cup water (for blending)

For Tempering and Batter:

  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tsp chana dal
  • Pinch of asafoetida (hing)
  • Few curry leaves, chopped
  • 2 green chillies, finely chopped
  • 1 cup rava / suji (coarse semolina)
  • ½ cup curd (yogurt)
  • ½ tsp salt
  • 2 tbsp coriander leaves, finely chopped
  • ¼ cup water (adjust to batter consistency)
  • ½ tsp eno fruit salt

Instructions

  1. Prepare Potato Puree: Peel the potato and roughly chop it. In a blender, combine the potato pieces with ¼ cup water and blend until you get a smooth puree. Set aside.
  2. Heat Tempering: In a large kadai or skillet, heat 2 tablespoons of oil. Add ½ teaspoon mustard seeds, ½ teaspoon cumin seeds, 1 teaspoon chana dal, a pinch of asafoetida, chopped curry leaves, and finely chopped green chillies. Allow the seeds to splutter and the chana dal to turn golden, infusing the oil with flavor.
  3. Roast Rava: Add 1 cup of rava (coarse semolina) to the tempered spices. Roast it on low to medium flame stirring continuously until the rava becomes aromatic and a light golden shade. This step enhances the nuttiness and prevents raw flavor.
  4. Cool Rava: Transfer the roasted rava to a large bowl and let it cool completely to avoid curdling or cooking the curd added later.
  5. Mix Batter: To the cooled rava, add the prepared potato puree, ½ cup curd, ½ teaspoon salt, and 2 tablespoons finely chopped coriander leaves. Mix well to combine all ingredients thoroughly.
  6. Rest Batter: Allow the batter to rest for 15 minutes so that the rava absorbs moisture and softens, improving the fluffiness of the idlis.
  7. Adjust Consistency: After resting, add up to ¼ cup water to adjust the batter consistency as required. The batter should be thick but pourable.
  8. Add Leavening Agent: Just before steaming, gently fold in ½ teaspoon of eno fruit salt. This will help the idlis rise and become fluffy.
  9. Steam Idlis: Grease the idli molds lightly with oil. Pour the batter evenly into the idli plates. Steam the idlis in a steamer or pressure cooker without a whistle for 15 minutes until cooked and fluffy.
  10. Serve: Remove the idli plates carefully and let them cool for a minute. Serve hot with coriander chutney or your favorite South Indian accompaniments.

Notes

  • Ensure the rava is roasted well to remove raw flavor and achieve a nice aroma.
  • Adjust water quantity in the batter for desired consistency; too thin batter will lead to dense idlis.
  • Use fresh eno fruit salt for effective leavening.
  • Steaming can be done in an idli steamer or any steamer; avoid over-steaming which can dry out the idlis.
  • For variation, you can add grated ginger or finely chopped vegetables like carrots.
