Ingredients
Dry Ingredients
- 2 cups rolled old-fashioned oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon sea salt
- 1 Tablespoon ground flaxseed
- ½ cup raisins
Wet Ingredients
- 2 cups non-dairy milk (unsweetened vanilla almond milk recommended)
- ½ cup unsweetened applesauce
- ¼ cup maple syrup
- 1 Tablespoon coconut oil
- 1 teaspoon vanilla extract
- 1 cup diced apple (divided)
Instructions
- Preheat oven and prepare dish: Preheat your oven to 375°F (190°C). Lightly spray an 8x8 inch baking dish with non-stick spray to prevent sticking.
- Mix dry and wet ingredients: In a large bowl, thoroughly combine the rolled oats, cinnamon, baking powder, sea salt, almond milk, unsweetened applesauce, maple syrup, ground flaxseed, melted coconut oil, and vanilla extract. Stir until all ingredients are evenly mixed.
- Add fruit: Fold in the raisins and ¾ cup of the diced apples into the oat mixture, reserving the remaining ¼ cup of diced apples for topping.
- Transfer to baking dish: Pour the oat mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining diced apples on top as a finishing touch.
- Bake: Bake in the preheated oven for about 40 minutes, or until the center is set and a toothpick inserted in the middle comes out clean.
- Cool and serve: Allow the baked oatmeal to cool slightly before serving. For enhanced flavor, drizzle with almond butter, additional almond milk, or maple syrup as desired.
- Storage and reheating: Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat the whole dish, cover with foil and bake at 350°F (175°C) for about 20 minutes. For individual portions, reheat in a 350°F oven or toaster oven for 5-10 minutes, or microwave for 1 minute.
Notes
- You can substitute raisins with other dried fruits such as cranberries or chopped dates.
- Use any non-dairy milk to keep the recipe dairy-free or substitute with regular milk if preferred.
- Adjust maple syrup quantity to your desired sweetness level.
- Ensure the baking dish is well-greased to avoid sticking.
- For a nut-free version, omit the almond butter topping or substitute with seed butter.
- This baked oatmeal can be frozen for up to one month; thaw overnight in the refrigerator before reheating.
