Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F. Lightly mist the bottom and halfway up the sides of a 9×9-inch pan or a similar 2 ½-quart baking dish with nonstick cooking spray to prevent sticking.
- Mix Ingredients: In a large bowl, combine the refried beans, sour cream, half of the shredded Mexican blend cheese (½ cup), diced green chiles, chili powder, salt, ground cumin, garlic powder, and dried oregano. Stir the mixture well until evenly blended.
- Spread Mixture in Dish: Using a spatula, spread the bean mixture evenly into the prepared baking dish, smoothing the top to create an even layer.
- Add Cheese Topping: Sprinkle the remaining ½ cup of shredded Mexican blend cheese evenly over the top of the bean mixture.
- Bake the Dip: Place the baking dish in the preheated oven and bake for about 20 minutes or until the dip is bubbly, and the cheese topping is melted and lightly browned.
- Serve: Remove from the oven and serve warm with tortilla chips, fresh vegetables, or your favorite dippers. Garnish with optional toppings like jalapeño slices, cilantro, or avocado if desired.
- Store Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 5 days for best freshness.
