Ingredients
Sausages and Oil
- 1/2 tbsp oil
- 8 sausages of choice
Onion Gravy
- 1 large onion, halved and finely sliced (yellow, white, or brown)
- 2 garlic cloves, minced
- 3 tbsp plain flour
- 2 cups beef stock/broth
- 1/4 tsp salt
- 1/2 tsp black pepper
Accompaniments
- Mashed potato
- Peas
Instructions
- Cook Sausages: Heat 1/2 tbsp oil in a large skillet over medium-high heat. Add 8 sausages, turning frequently, and cook until browned all over and cooked through, about 8 minutes depending on sausage size.
- Remove Sausages: Transfer sausages to a plate and reduce heat to medium.
- Check Oil in Skillet: Ensure about 2 tbsp oil remains in the skillet; if less, add butter or oil to make up the difference.
- Sauté Onion and Garlic: Add the sliced onion and minced garlic to the skillet and cook until golden brown, about 4 minutes.
- Add Flour: Sprinkle 3 tbsp plain flour over the onion mixture and stir to combine. Cook the flour, stirring constantly, for 2 minutes to remove the raw taste.
- Incorporate Beef Stock: Gradually pour in about 3/4 cup of beef stock, stirring to integrate and form a thick sludge, then add the remaining stock and stir until smooth. Use a whisk if necessary to remove lumps.
- Simmer Gravy: Allow the gravy to simmer for 2 to 3 minutes, stirring occasionally, until it thickens slightly but remains a little thinner than desired as it will thicken further while serving.
- Season Gravy: Stir in 1/4 tsp salt and 1/2 tsp black pepper, taste, and adjust seasoning with more salt if needed.
- Serve: Plate the sausages with generous amounts of the onion gravy, accompanied by creamy mashed potatoes and peas. For a low-carb option, substitute mashed potatoes with creamy cauliflower mash.
Notes
- You can use any type of sausage, including pork, beef, or vegetarian options.
- Yellow, white, or brown onions all work well; choose your preference.
- For thicker gravy, simmer a bit longer, but remember it thickens more as it cools slightly.
- Butter can be added to the pan if oil is insufficient after cooking sausages to prevent the gravy from sticking or burning.
- Cauliflower mash is a great low-carb alternative to traditional mashed potatoes.
