Description

A quick and delicious tuna melt recipe perfect for a speedy lunch or light dinner. This easy tuna melt uses toasted bagels topped with a creamy tuna, sweetcorn, and red onion mixture, finished under the grill with melted mozzarella cheese for a satisfying melt in just 10 minutes.

Ingredients

Bagels

  • 4 Bagels

Tuna Mix

  • 290 g Tinned tuna (2x tins, approx. 105g drained weight)
  • 340 g Sweetcorn (1x tin, approx. 285g drained)
  • 1/2 Red onion, finely chopped
  • 75 g Mayonnaise (reduced fat preferred)

Topping

  • 150 g Grated mozzarella cheese

Instructions

  1. Prepare the Bagels: Cut each bagel in half horizontally to create 8 halves in total.
  2. Toast the Bagels: Place the bagel halves cut side up under a medium grill and toast until the tops are golden brown and slightly crisp.
  3. Mix Tuna Filling: In a large bowl, combine the drained tuna, sweetcorn, finely chopped red onion, and mayonnaise. Mix well until all ingredients are evenly incorporated.
  4. Assemble Tuna Melt: Spread the tuna mixture evenly over each toasted bagel half.
  5. Add Cheese and Grill: Sprinkle the grated mozzarella generously over the tuna topping. Return the bagels to the grill and cook until the cheese is melted, golden, and bubbling, about 3-5 minutes.

Notes

  • Use reduced-fat mayonnaise to lower calories while keeping creaminess.
  • For extra flavor, add a pinch of black pepper or a dash of lemon juice to the tuna mix.
  • Ensure the grill is at medium heat to prevent burning the bagels before the cheese melts.
  • Drain the tuna and sweetcorn thoroughly to avoid soggy bagels.
  • Serve immediately while the cheese is hot and gooey for best texture and flavor.
