Description

Delicious and nutritious Breakfast Egg Muffins featuring red bell peppers, scallions, and creamy feta cheese, baked to perfection for a protein-packed morning meal that's easy to prepare and perfect for meal prepping.

Ingredients

Vegetables

  • 2 cups diced red bell pepper (about 2 medium)
  • ½ cup chopped scallions
  • 1 garlic clove (grated)

Egg Mixture

  • 9 large eggs
  • Heaping ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 3 tablespoons all-purpose flour
  • ¾ teaspoon baking powder

Other

  • Extra-virgin olive oil (for greasing the pan)
  • ⅓ cup crumbled feta cheese

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to ensure it's ready for baking the egg muffins evenly.
  2. Prepare muffin tin: Grease a nonstick muffin tin generously with extra-virgin olive oil to prevent sticking. Distribute the diced red bell peppers and chopped scallions evenly among the muffin cups.
  3. Mix egg batter: In a large bowl, whisk together the 9 large eggs until smooth. Add the grated garlic, sea salt, and several grinds of freshly ground black pepper. Sprinkle the all-purpose flour and baking powder on top, then whisk gently to combine. A few flour clumps are acceptable and won't affect the texture.
  4. Assemble muffins: Pour the egg mixture evenly into each muffin cup, filling approximately a scant ¼ cup per cup. Top each with a sprinkle of crumbled feta cheese for a creamy, tangy finish.
  5. Bake: Place the muffin tin in the preheated oven and bake for 22 to 24 minutes, or until the eggs are fully set and slightly golden on top.
  6. Cool and serve: Allow the muffins to cool slightly before carefully removing them from the pan. Serve warm for a nutritious and convenient breakfast option.

Notes

  • If you prefer, substitute feta with goat cheese or shredded cheddar for different flavors.
  • For a gluten-free version, replace all-purpose flour with a gluten-free flour blend.
  • These muffins can be stored in the refrigerator for up to 4 days and reheated in a microwave.
  • Add chopped spinach or mushrooms along with the bell peppers and scallions for extra veggies.
  • To make these dairy-free, omit the feta or use a plant-based cheese alternative.
