Description

This quick and easy Broccoli and Stilton Soup combines fresh broccoli with creamy Stilton cheese for a comforting and flavorful meal. Perfect for a cozy lunch or light dinner, this soup can be made on the stovetop or in a slow cooker, offering versatility for your kitchen routine.

Ingredients

Main Ingredients

  • 800 g Broccoli (Fresh or frozen)
  • 1 Onion (Peeled and chopped)
  • 2 Garlic cloves (Peeled and crushed)
  • 750 ml Stock (Vegetable or chicken stock, see notes)
  • 300 ml Milk
  • 160 g Stilton cheese (Grated or crumbled)
  • 40 g Stilton cheese (Crumbled, to top soup bowls)
  • Croutons (Optional, to serve)

Instructions

  1. Prepare the Vegetables: Wash and chop the broccoli into large chunks if using fresh. Finely slice the onion and crush the garlic cloves. If using frozen broccoli, you can add it directly without thawing.
  2. Combine Ingredients in Pan: Place the broccoli, onion, garlic, stock, and a generous amount of salt and pepper into a large saucepan. Stir to combine.
  3. Cook the Vegetables: Bring the mixture to a boil with the lid on. Reduce the heat and simmer for 15 minutes, or until the vegetables are just tender.
  4. Blend the Soup: Remove the pan from heat. Add the milk and 160 g of Stilton cheese, then blend the mixture until smooth, either using an immersion blender or transferring to a blender carefully.
  5. Reheat if Needed: Return the blended soup to the pan and heat gently if necessary, ensuring it is warm but not boiling.
  6. Serve with Toppings: Ladle the soup into bowls. Sprinkle the reserved 40 g of Stilton cheese on top along with croutons if desired for added texture and flavor.
  7. Slow Cooker Method (Optional): Place broccoli, onion, garlic, and stock in the slow cooker. Cook on HIGH for 3-4 hours or LOW for 5-6 hours until vegetables are tender. Add milk and 160 g Stilton cheese; blend until smooth. Serve immediately or keep warm on HIGH for 15-30 minutes for hotter soup.

Notes

  • You can use vegetable or chicken stock based on preference or dietary needs.
  • For a richer soup, use whole milk or substitute with cream.
  • Frozen broccoli is a convenient option and can be used without thawing.
  • Croutons add a delightful crunch but are optional depending on preference.
  • Adjust seasoning with salt and pepper to taste before serving.
