Description

These Brownie Mix Cookies are a quick and delicious treat made from a standard brownie mix combined with simple ingredients to create soft, fudgy cookies perfect for any occasion. With optional chocolate chips added for extra indulgence, they offer the perfect balance of chewy edges and soft centers.

Ingredients

Dry Ingredients

  • 1 box (18-18.3 oz) brownie mix
  • 1/4 cup all-purpose flour
  • 1/2 cup chocolate chips (optional but highly recommended)

Wet Ingredients

  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 Tbsp water

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and facilitate easy cleanup.
  2. Mix Ingredients: In a large bowl, combine the brownie mix, all-purpose flour, eggs, vegetable oil, water, and chocolate chips. Use a wooden spoon to mix until just combined, being careful not to over-mix to maintain a tender texture.
  3. Scoop Dough: Using a cookie scoop (approximately 1 1/2 tablespoons or a #40 scoop), drop the cookie dough onto the prepared baking sheet with at least one inch spacing between each dough ball to allow for spreading.
  4. Bake: Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are set but the centers still appear soft and slightly underbaked for a fudgy texture.
  5. Cool: Allow the cookies to cool on the baking sheet for a few minutes to firm up, then transfer them to a wire rack to cool completely before enjoying.

Notes

  • For a richer flavor, try substituting the vegetable oil with melted butter.
  • To make these cookies even fudgier, slightly underbake by removing them at 10 minutes.
  • Chocolate chips are optional but highly recommended for added texture and taste.
  • Storage: Store cooled cookies in an airtight container at room temperature for up to 3 days.
  • To keep dough fresh, refrigerate it for up to 24 hours before baking.
