Description

These Buffalo Cauliflower Bites are a delicious and healthier alternative to traditional buffalo wings. Crispy baked cauliflower florets are coated in a spicy batter, baked until tender and golden, then tossed in a homemade buffalo sauce made with hot sauce, butter, and honey for a perfect balance of heat and sweetness. Ideal for a snack, appetizer, or game day treat.

Ingredients

Batter

  • 1 medium cauliflower head, cut into florets
  • 1 cup all-purpose flour
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 ¼ cup water (plus ¼ cup more if needed)

Sauce

  • 4 tbsp butter
  • ⅓ cup hot sauce
  • 2-4 tbsp honey (adjust to taste)

Instructions

  1. Prepare the oven and cauliflower: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper. Lightly oil the parchment paper to prevent sticking. Cut the cauliflower into bite-sized florets and set aside.
  2. Make the batter: In a mixing bowl, combine the all-purpose flour, salt, pepper, cayenne pepper, garlic powder, and paprika. Whisk these dry ingredients together thoroughly. Gradually add 1 ¼ cup water while whisking to form a smooth batter. Add an additional ¼ cup water if the batter is too thick for coating.
  3. Coat cauliflower florets: Working in small batches, dip cauliflower florets into the batter, ensuring each floret is evenly coated. Lift and allow any excess batter to drip off before placing the florets onto the prepared baking sheet. Repeat until all florets are coated and arranged in a single layer.
  4. Bake the cauliflower: Place the baking sheet in the preheated oven and bake for 20-25 minutes until the cauliflower is cooked through and the batter is starting to crisp up.
  5. Prepare buffalo sauce: While the cauliflower is baking, combine the butter, hot sauce, and honey in a small saucepan over medium-low heat. Bring the mixture to a gentle simmer, stirring occasionally, and cook for 2-3 minutes until the sauce slightly thickens. Remove from heat.
  6. Toss and serve: Once the baked cauliflower is done, transfer it to a large bowl. Pour the warm buffalo sauce over the florets and toss until each piece is well coated. Serve hot with ranch dressing or your favorite dipping sauce.

Notes

  • You can adjust the honey in the sauce to make the bites as sweet or spicy as you prefer.
  • For extra crispiness, you can broil the cauliflower for an additional 2-3 minutes after baking, watching carefully to avoid burning.
  • These bites are best enjoyed immediately but can be reheated in the oven to maintain texture.
  • For a vegan version, substitute butter with a plant-based alternative and use vegan-friendly hot sauce.
  • Pair with celery sticks and ranch or blue cheese dressing for a classic buffalo experience.
