Ingredients
Meatball Mixture
- 1 lb ground chicken
- ¼ cup buffalo sauce
- 1 large egg
- ¼ cup thinly sliced green onions (plus more for garnish)
- ¼ cup grated carrots
- ¼ cup breadcrumbs (or ⅓ cup packed almond flour - 52 grams)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
For Serving
- ¼ cup buffalo sauce (remaining)
- Blue cheese dressing or ranch dressing
- Blue cheese crumbles
- Celery sticks (optional)
- Carrot sticks (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Ingredients: In a large bowl, combine the ground chicken, ¼ cup buffalo sauce, egg, thinly sliced green onions, grated carrots, breadcrumbs or almond flour, garlic powder, onion powder, sea salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Form Meatballs: Using a cookie scoop or small spoon, scoop portions of the meat mixture and shape them gently into balls with your hands, sized for bite-sized meatballs.
- Bake Meatballs: Arrange the formed meatballs evenly spaced on the prepared baking sheet. Bake in the preheated oven for 18-20 minutes, until cooked through and golden on the outside.
- Toss with Sauce: Remove the meatballs from the oven and drizzle the remaining ¼ cup of buffalo sauce over them. Gently toss to coat each meatball evenly with the sauce for extra flavor and spice.
- Serve: Serve the buffalo chicken meatballs immediately, garnished with extra green onions and accompanied by a drizzle of blue cheese or ranch dressing and optional celery or carrot sticks for crunch and freshness.

- You can substitute almond flour for breadcrumbs to make this recipe gluten free.
- Make sure not to overmix the meatball ingredients to keep them tender.
- Serving with blue cheese or ranch dressing helps balance the heat from the buffalo sauce.
- Leftover meatballs store well in the refrigerator for up to 3 days.
- For a spicier kick, add extra garlic powder or cayenne pepper to the mixture.
