Description

This Cajun Chicken Sloppy Joes recipe offers a flavorful twist on the classic sloppy joe sandwich, combining tender ground chicken seasoned with bold Cajun spices, creamy tomatoes, and a hint of heat. Served on toasted burger rolls with cheese, slaw, sour cream, and shredded lettuce, this easy skillet meal is perfect for a quick and comforting dinner.

Ingredients

For the Sloppy Joe Mixture

  • 1 tbsp oil
  • 1 tbsp butter
  • 1 onion, finely chopped
  • 1 rib celery, finely chopped
  • ½ green bell pepper, finely chopped
  • 1 lb ground chicken
  • 3 tbsp Cajun seasoning (see note 1)
  • 3 cloves garlic, minced
  • ½ cup crushed tomatoes
  • ½ tbsp brown sugar
  • ½-1 tsp hot sauce (optional)
  • ½ cup heavy cream
  • ¼ tsp salt (see note 2)

For Serving

  • 4 burger rolls
  • Sliced cheese
  • Slaw
  • Sour cream
  • Shredded lettuce

Instructions

  1. Melt the fats: In a large skillet over medium-low heat, melt 1 tablespoon of oil and 1 tablespoon of butter together to create a flavorful base for the vegetables.
  2. Sauté the vegetables: Add the finely chopped onion, celery, and green bell pepper to the skillet. Cook for 7 to 8 minutes until they have softened and reduced in volume, releasing their flavors.
  3. Brown the chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for about 5 minutes until the chicken changes color and is mostly cooked through.
  4. Add seasoning and garlic: Sprinkle the Cajun seasoning evenly over the chicken, then add the minced garlic. Stir and cook for about 1 minute, being careful not to let the garlic brown or burn.
  5. Combine liquids and simmer: Pour in the crushed tomatoes, brown sugar, hot sauce (if using), and heavy cream. Stir everything well to combine. Reduce the heat to low to let the mixture simmer gently.
  6. Simmer and thicken: Cook the mixture on low heat for 15 minutes, stirring frequently to prevent sticking or burning on the bottom of the pan. This allows the flavors to meld and the sauce to thicken nicely.
  7. Adjust seasoning: Taste the mixture and add salt as needed to balance the flavors according to your preference.
  8. Prepare sandwiches: Toast the burger rolls until lightly crisp and warm. Spoon generous portions of the Cajun chicken mixture onto the rolls. Add sliced cheese, slaw, sour cream, and shredded lettuce as desired, then serve immediately.

Notes

  • Note 1: Cajun seasoning can be store-bought or homemade, typically containing spices like paprika, cayenne, garlic powder, onion powder, oregano, and thyme.
  • Note 2: Salt is added at the end to better control the seasoning as Cajun seasoning can be salty depending on the brand or recipe used.
  • Note 3: Stirring frequently during the simmering phase prevents burning and helps the sauce thicken evenly without sticking.
  • Note 4: Toasting the burger rolls enhances texture and prevents sogginess when filled with the moist sloppy joe mixture.
