Ingredients
Dough Ingredients
- 3 cups all-purpose flour
- 1 tbsp sugar
- 2¼ tsp instant yeast
- 1 tsp salt
- ¾ cup warm milk
- ¼ cup warm water
- 3 tbsp softened butter
- 1 egg (for egg wash)
Filling Ingredients
- 2 cups cooked shredded chicken
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 2 tbsp hot sauce (adjust to taste)
- ½ tsp smoked paprika
- ½ tsp ground cumin
- Salt and pepper, to taste
- ½ cup cream cheese
- 1 cup shredded mozzarella
Instructions
- Make dough: In a large mixing bowl, combine the all-purpose flour, sugar, salt, and instant yeast. Add the warm milk, warm water, and softened butter. Knead the mixture for 8-10 minutes until a smooth, elastic dough forms. Cover the dough and let it rise for 1 hour or until it doubles in size.
- Prepare filling: Heat the olive oil in a pan over medium heat. Sauté the finely chopped onion until translucent, then add the minced garlic and cook for another minute. Stir in the tomato paste, smoked paprika, ground cumin, salt, and pepper. Add the cooked shredded chicken along with the hot sauce, mixing well to coat the chicken evenly. Remove the pan from heat and fold in the cream cheese and shredded mozzarella, stirring until melted and creamy.
- Assemble buns: Once the dough has risen, gently punch it down and divide it into 8 equal portions. Flatten each portion into a round disc. Spoon the chicken filling into the center of each disc, then fold and seal the dough around the filling, pinching the edges tightly to prevent leaks. Place the filled buns on a baking tray lined with parchment paper, spaced apart to allow for expansion.
- Apply egg wash: Beat the egg and brush it over the tops of the buns to give them a golden, shiny finish after baking.
- Bake buns: Preheat your oven to 375°F (190°C). Bake the buns for 20-25 minutes or until they are golden brown on top and cooked through.
- Cool and serve: Remove the buns from the oven and allow them to cool slightly before serving warm. Enjoy as a savory snack or meal accompaniment.
Notes
- You can adjust the amount of hot sauce based on your preferred spice level.
- Ensure that the liquids for the dough are warm, not hot, to activate the yeast properly.
- For extra flavor, you can add chopped fresh herbs such as parsley or cilantro to the filling.
- These buns can be frozen after assembly. Thaw before baking.
- Brush with egg wash for a shiny crust or omit for a matte finish if preferred.
