Ingredients
Beans & Vegetables
- 15.5 oz. can kidney beans, drained and rinsed
- 1 cup mixed frozen seasoning blend vegetables
- 2 tbsp taco seasoning
- ½ tbsp olive oil
Cheese & Wraps
- 4 oz. medium cheddar cheese, shredded
- 5 medium flour tortillas
Instructions
- Gather Ingredients: Collect all the required ingredients including canned kidney beans, shredded cheddar cheese, olive oil, taco seasoning, frozen vegetable blend, and flour tortillas.
- Prep Beans and Cheese: Drain and rinse the kidney beans thoroughly. Shred the cheddar cheese if not pre-shredded.
- Sauté Veggies and Seasoning: Heat olive oil in a skillet over medium heat. Add taco seasoning and the frozen vegetable blend, sautéing for 4-5 minutes until heated through and fragrant.
- Warm Beans: Add the drained kidney beans to the pan, reduce heat to low, and cook until the beans are warmed through.
- Mash Beans: Using a fork or potato masher, gently mash some of the beans while leaving some whole to create a creamy texture that helps hold the quesadillas together.
- Prepare Pan: Remove the bean mixture from the pan and cover it in a bowl. Wipe down the pan to prepare for toasting the quesadillas.
- Assemble Quesadillas: Lay out each flour tortilla and sprinkle shredded cheddar cheese on half of each tortilla. Add a scoop of the bean and vegetable mixture over the cheese, then sprinkle an additional layer of cheddar cheese on top.
- Fold Tortillas: Fold each tortilla in half over the filling to form a semicircle.
- Cook Quesadillas: Place the folded tortillas back into the skillet over medium heat. Toast each side for 2-3 minutes until golden, crispy, and the cheese has melted.
- Serve: Remove quesadillas, cut each into halves, and serve immediately while hot and crispy.
Notes

- You can adjust the level of mashing the beans depending on your preferred texture.
- The seasoning blend in the frozen veggies enhances flavor but can be substituted with fresh diced onions and peppers if preferred.
- Use medium cheddar cheese for best melting and flavor balance.
