Ingredients
Chicken
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
Sandwich Fillings
- 1 avocado, sliced
- 4 slices cheese (Swiss, cheddar, or provolone)
- 1 small red onion, thinly sliced
- 1 tomato, sliced
Bread & Spreads
- 4 slices bread (sourdough, ciabatta, or choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
For Grilling
- Butter or olive oil, for grilling
Instructions
- Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked through and no longer pink inside. Remove from skillet and let rest for a few minutes before slicing thinly.
- Prepare the Avocado and Cheese: Slice the avocado and set aside. Prepare your choice of cheese slices and keep ready for assembling.
- Prepare the Bread: Spread a thin layer of mayonnaise on each bread slice, then spread Dijon mustard on top of the mayonnaise evenly.
- Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado slices, cheese, red onion, and tomato. Place the remaining bread slices on top with the mayo side facing down.
- Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the pan and cook for 3-4 minutes per side, or until the bread is golden brown and cheese has melted. Press gently with a spatula to help the cheese melt evenly.
- Serve: Remove the sandwiches from the skillet, allow to cool for a minute, then slice in half and serve warm.
Notes
- Use any bread type you prefer, but sturdy breads like sourdough or ciabatta hold up best for grilling.
- For extra flavor, add a pinch of garlic powder or smoked paprika when seasoning the chicken.
- Avocado should be ripe but firm to hold slices well without turning mushy.
- Feel free to swap mayonnaise for a lighter option like Greek yogurt if desired.
- Ideal served immediately while cheese is melty and bread is crisp.
