Description

This Chicken Crust Caesar Salad Pizza is a low-carb, protein-packed twist on traditional pizza. Using ground chicken as the crust, it’s baked to a golden perfection and topped with fresh romaine lettuce tossed in creamy Caesar dressing, red onions, and parmesan cheese. Perfect for a light yet satisfying meal that combines the flavors of a Caesar salad with the comfort of pizza.

Ingredients

Crust Ingredients

  • 1 egg
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded mozzarella cheese
  • 1 lb ground chicken breast (or ground chicken)

Toppings

  • 9 oz chopped romaine lettuce (about 1 head romaine lettuce)
  • 1/2 red onion, thinly sliced
  • 1/4 cup prepared Caesar salad dressing (Ken's Creamy Caesar recommended)
  • 2 tablespoons shredded parmesan cheese
  • Pinch of red chili pepper flakes (optional)

Instructions

  1. Preheat: Preheat the oven to 400°F (200°C). Line a 13-inch pizza pan with parchment paper or use nonstick sprayed foil and set aside. Alternatively, a half sheet pan can be used. Place another half sheet pan on the bottom rack of the oven to catch any spillovers during baking.
  2. Mix Crust: In a large bowl, combine the egg, onion powder, garlic powder, dried oregano, salt, and pepper. Stir with a fork until blended. Add the shredded mozzarella cheese, then crumble the ground chicken breast over the mixture and stir everything together thoroughly to form the crust mixture.
  3. Bake Crust: Transfer the chicken mixture onto the prepared pan and shape it into an 11-inch circle using a spatula (or a rectangle if using a half sheet pan). Bake in the preheated oven for 20-25 minutes or until the chicken crust is golden brown on top. Rotate the pan halfway through baking. It is normal to see some liquid released which will evaporate by the end of baking. Allow the crust to cool slightly.
  4. Prepare Salad Topping: While the crust cools, place the chopped romaine lettuce in a medium bowl. Add the Caesar salad dressing and toss to coat the leaves evenly.
  5. Assemble Pizza: Cut the baked chicken crust into four slices or more. Top each slice with the dressed Caesar salad, sliced red onion, and sprinkle shredded parmesan cheese. Optionally, add a pinch of red chili pepper flakes for a mild heat boost.
  6. Serve: Serve immediately for best texture and flavor enjoyment.

Notes

  • Using ground chicken breast offers a lean, protein-rich crust while keeping carbs low.
  • Placing a baking tray below helps prevent oven mess due to liquid drip from the crust during baking.
  • Letting the crust cool slightly before topping prevents salad wilting.
  • Caesar dressing amount can be adjusted to taste for more or less creaminess.
  • Optional chili flakes add a subtle spicy kick, feel free to omit for mild flavor.
