Description

A refreshing and easy-to-make Chicken Salad with Apples recipe combining tender chicken, crunchy almonds, sweet dried cranberries, and crisp apples, all tossed in a creamy honey-mustard dressing. Perfect for sandwiches, salads, or as a light snack.

Ingredients

Salad Ingredients

  • 2 cups diced cooked chicken (rotisserie preferred)
  • 1/2 cup sliced almonds
  • 1/3 cup dried cranberries (or dried tart cherries)
  • 1 cup finely diced apples (Honeycrisp preferred)
  • 1/3 cup thinly sliced green onions (optional)

Dressing Ingredients

  • 1/3 cup mayo
  • 3 tablespoons sour cream (light works great)
  • 1-1/2 tablespoons honey
  • 1-1/2 tablespoons apple cider vinegar
  • 1-1/2 teaspoons Dijon-style mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Make Dressing: In a small bowl, whisk together the mayo, sour cream, honey, apple cider vinegar, Dijon mustard, salt, and pepper until the mixture is smooth and well combined.
  2. Assemble Salad: In a large bowl, combine the diced cooked chicken, sliced almonds, dried cranberries, diced apples, and green onions if using. Pour the dressing over the salad ingredients.
  3. Toss the Salad: Gently toss all the ingredients together ensuring every piece is coated with the dressing. Taste the salad and adjust seasoning if needed.
  4. Serve: Serve the chicken salad chilled or at room temperature. It works great as a sandwich filling, on sliced apples, over lettuce boats, or with crackers for an easy and delightful meal or snack.

Notes

  • Use sliced almonds for added crunch, but walnuts or pecans can be substituted.
  • Honeycrisp apples provide the best balance of sweetness and crunch, but Granny Smith or Fuji apples can be used.
  • Try serving this chicken salad in a sandwich, on crackers, or spooned onto lettuce leaves for a low-carb option.
