Ingredients
Chili and Cheese
- 6 poblano chile peppers
- 8 ounces Monterey Jack cheese, shredded
Batter
- 3 eggs
- ¼ cup milk
- ⅔ cup cornmeal
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Toppings (Optional)
- Your favorite salsa
- Other toppings as desired (such as sour cream, cilantro, or diced onions)
Instructions
- Roast the chilies: Broil the poblano chile peppers in the oven until their skins are blackened and blistered, creating a smoky flavor.
- Steam the peppers: Place the roasted chilis in a Ziploc bag and seal it to let them steam for 15 minutes. This loosens the skins for easy peeling.
- Preheat the oven: Set your oven to 450°F (232°C) to prepare for baking the casserole.
- Prepare the peppers: Peel off the blackened skin from the peppers, then carefully remove the seeds. Chop the peeled peppers into large pieces.
- Assemble the casserole base: Spray an 8x8-inch casserole dish with nonstick cooking spray. Spread the chopped chili peppers evenly in a single layer and sprinkle the shredded Monterey Jack cheese over the top.
- Make the batter: In a medium bowl, whisk together the eggs, milk, cornmeal, baking powder, salt, and black pepper until well combined.
- Bake the casserole: Pour the egg and cornmeal mixture evenly over the chilis and cheese. Bake for 15 to 20 minutes, or until the top is a light golden brown and the casserole is set.
- Serve: Remove from the oven and serve immediately with your favorite salsa and additional toppings if desired for extra flavor and texture.
Notes
- Make sure to peel the peppers thoroughly after roasting to remove any burnt bits that could affect the flavor.
- Use fresh poblano peppers for the best smoky flavor and mild heat.
- You can substitute Monterey Jack cheese with a mild melting cheese like mozzarella or queso fresco.
- Adjust seasoning in the batter according to your taste preferences.
- Serve with sides such as rice, beans, or a fresh salad for a complete meal.
