Description

Bunet is a traditional Piedmontese chocolate pudding resembling a chocolate crème caramel, characterized by its caramelized sugar base and rich chocolate pudding infused with crunchy Amaretti cookies and sweet Marsala wine. This elegant dessert is baked in a water bath to ensure a smooth, silky texture and chilled before serving for the perfect finish.

Ingredients

Caramelized Sugar

  • 1 cup (200 grams) granulated sugar
  • ¼ cup (60 ml) water

Chocolate Pudding

  • 3 cups (720 ml) whole milk
  • 7 ounces (200 grams) crunchy Amaretti cookies (reserve a few cookies for serving)
  • 4 tablespoons cocoa powder
  • ¾ cup (150 grams) granulated sugar
  • 6 eggs
  • 1 egg yolk
  • ½ cup (120 ml) sweet Marsala wine

Instructions

  1. Prepare Caramelized Sugar: Place the sugar and water into a medium saucepan and stir over low heat until the sugar dissolves, avoiding splashing sugar crystals on the pan sides. Stop stirring and increase heat to medium, boiling until the sugar caramelizes to a deep amber color. Carefully pour this hot caramel into the bottom of a large bread loaf pan (about 10 x 4 ½ inches) and swirl to coat the bottom and lower sides. Set aside to cool.
  2. Heat Milk and Amaretti: Preheat the oven to 350ºF (180ºC). Pour whole milk and Amaretti cookies into a medium saucepan and heat over medium until just below boiling, softening the cookies.
  3. Mix Eggs and Sugar: In a large bowl, beat together the eggs, egg yolk, and granulated sugar using a slow speed immersion blender or hand whisk until well combined.
  4. Combine Cocoa and Marsala: When the milk mixture is hot, remove from heat and whisk in the cocoa powder and Marsala wine using the same whisk or immersion blender until smooth. The Amaretti cookies should be softened and breaking up.
  5. Incorporate Milk into Egg Mixture: Slowly pour the warm milk mixture into the beaten eggs and sugar while continuously whisking gently to avoid curdling.
  6. Assemble and Bake in Bain Marie: Use a ladle to pour the pudding mixture onto the caramelized sugar layer in the loaf pan. Place the loaf pan inside a larger baking pan with high sides. Pour boiling water into the large pan until it reaches halfway up the sides of the loaf pan to create a water bath.
  7. Bake: Carefully transfer the baking pan to the preheated oven and bake for 40 minutes, until the pudding is set but still slightly wobbly in the center.
  8. Cool and Chill: Remove the loaf pan from the water bath and allow it to cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to fully set and develop flavors before serving.

Notes

  • Ensure the boiling water in the water bath is very hot before baking to guarantee even cooking.
  • If Marsala wine is unavailable, you can substitute with sweet dessert wine or a non-alcoholic sweet grape juice.
  • Reserve some Amaretti cookies to garnish the Bunet at serving for added crunch and presentation.
  • Use oven mitts when handling the hot caramel and water bath to prevent burns.
