Description

This Chocolate Baked Protein Oats recipe is a quick, nutritious, and delicious single-serving breakfast or snack option packed with protein and rich chocolate flavor. Made with oats, chocolate protein powder, and cocoa, it is baked to perfection to create a warm, comforting dish that can be customized with your favorite toppings like fresh berries or sliced bananas.

Ingredients

Wet Ingredients

  • 1 large egg (see notes for vegan alternative)
  • 1 tablespoon nut butter (see notes for options)
  • 2-4 tablespoons milk of choice (e.g., almond milk)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup quick oats
  • 3 tablespoons chocolate protein powder
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Optional

  • 1-2 tablespoons chocolate chips

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the oats.
  2. Prepare ramekin: Lightly spray a 12-14 ounce ramekin with oil to prevent sticking and set it aside.
  3. Whisk wet ingredients: In a bowl, whisk together the egg, nut butter, maple syrup or honey, vanilla extract, and start by adding 2 tablespoons of the milk of your choice. Whisk until smooth.
  4. Add dry ingredients: Stir in the quick oats, chocolate protein powder, cocoa powder, baking powder, and salt. At this point, you can also mix in any additional ingredients like berries or nuts if desired.
  5. Adjust consistency: If the batter appears too thick or dry, gradually add the remaining milk (up to 2 tablespoons) until the mixture reaches a pourable consistency. This will depend on the protein powder used.
  6. Add chocolate chips: Pour the batter into the prepared ramekin and sprinkle chocolate chips on top if using.
  7. Bake: Place the ramekin in the oven and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean. For a firmer texture, bake a few minutes longer.
  8. Cool and serve: Remove the baked oats from the oven and let it cool for 5-10 minutes. Serve warm, optionally topped with fresh berries or sliced bananas for extra flavor and nutrition.

Notes

  • For a vegan version, substitute the egg with a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water, mixed and set to thicken).
  • Nut butter options include almond, peanut, or cashew butter depending on preference.
  • Milk alternatives can be almond, soy, oat, or any favorite plant-based milk.
  • Protein powder type and brand can affect the consistency; adjust milk quantity accordingly.
  • Optional mix-ins like berries or nuts can add texture and flavor variations.
