Ingredients
Pie Crust
- 1 baked and cooled pie crust (store-bought or homemade flaky crust or no-bake graham cracker/Oreo crust)
Mousse and Ganache
- 360 ml heavy cream (at least 36% fat)
- 370 g dark chocolate, chopped
- 4 large egg whites
- 200 g granulated sugar (caster sugar if in the UK)
- 1 tsp vanilla extract or vanilla bean paste
- ¼ tsp salt
Instructions
- Prepare Pie Crust: Bake your chosen pie crust fully according to recipe or package instructions and allow it to cool completely. If using a no-bake crust, simply prepare it as directed and set aside.
- Chop Chocolate: Finely chop the dark chocolate and place it in a large mixing bowl.
- Heat Cream: In a saucepan, heat the heavy cream with vanilla extract over medium heat until it is scalding hot — steam will rise and tiny bubbles will appear around the edges, but it should not boil.
- Make Ganache: Immediately pour the hot cream over the chopped chocolate and let sit for 1 minute, then stir until smooth and glossy. Remove approximately one-third of the ganache (about ¾ cup) into a separate bowl for topping later. Set both aside.
- Make Double Boiler: Fill a small saucepan with 1-2 inches of water and bring to a simmer over medium-low heat.
- Heat Egg Whites and Sugar: In a heatproof bowl, whisk together egg whites, sugar, and salt. Place the bowl over the simmering water (make sure bowl bottom does not touch water) and whisk constantly until the mixture reaches 160°F (71°C) or until it feels smooth when rubbed between fingers.
- Whip Meringue: Transfer the hot egg white mixture to a stand mixer fitted with a whisk attachment and whip on high speed until stiff, glossy peaks form and the bowl is no longer warm to the touch, about 10 minutes. If bowl remains warm, let it cool to room temperature before proceeding.
- Fold Meringue into Ganache: Ensure the larger portion of ganache has cooled to room temperature. Gently fold one-third of the meringue into the ganache, then repeat until fully incorporated and no lumps remain.
- Assemble Pie: Pour the mousse mixture into the cooled pie crust and smooth the surface evenly. Refrigerate for 10 minutes to slightly set.
- Top with Ganache: Warm the reserved ganache slightly if it has thickened, then pour evenly over the mousse layer, spreading to cover the entire surface.
- Chill: Refrigerate the pie for at least 4 hours or overnight to fully set. Serve chilled, optionally topped with a dollop of chantilly cream.
Notes
- Do not allow the cream to boil when heating; it should just reach scalding temperature to properly melt the chocolate.
- Make sure the ganache used for folding is fully cooled to avoid deflating the mousse.
- Whip egg whites to stiff peaks for a light, airy mousse texture.
- If using a no-bake crust, ensure it is well-pressed and chilled before filling.
- Use good quality dark chocolate (around 60-70% cocoa) for best flavor and texture.
- Let the pie chill thoroughly to allow full mousse set before serving.
- Leftover pie should be stored in the refrigerator covered and consumed within 3 days.
