Description

A quick and easy single-serving brownie made in a mug, ready in just 3 minutes using the microwave. This recipe uses common pantry ingredients and can be enjoyed with optional toppings like ice cream, whipped cream, or berries for a delicious dessert anytime.

Ingredients

Dry Ingredients

  • 3 tablespoons granulated sugar
  • 3 tablespoons all purpose flour
  • 1 ½ tablespoons unsweetened cocoa powder
  • Pinch of salt
  • 2 tablespoons chocolate chips (plus more for topping)

Wet Ingredients

  • 1 ½ tablespoons vegetable oil, melted coconut oil, or melted butter
  • 3 tablespoons milk
  • ¼ teaspoon vanilla extract

Optional Toppings

  • Ice cream
  • Whipped cream
  • Powdered sugar
  • Berries

Instructions

  1. Mix Dry Ingredients: Place the sugar, flour, cocoa powder, and salt into a microwave-safe mug. Use a small whisk or fork to stir until the mixture is evenly combined and free of lumps.
  2. Add Chocolate Chips: Stir in 2 tablespoons of chocolate chips, distributing them evenly throughout the dry mixture.
  3. Incorporate Wet Ingredients: Add the vegetable oil (or melted coconut oil or butter), milk, and vanilla extract to the mug. Stir gently with a spoon or small rubber spatula until just combined, being careful not to overmix.
  4. Top and Microwave: Sprinkle a few additional chocolate chips on top of the batter. Microwave on high for 60 seconds, then check for doneness. The brownie should be set with no raw batter, though fudgy chocolate chips are acceptable. If needed, continue microwaving in 10-second increments until done.
  5. Serve: Enjoy immediately as is or topped with ice cream, whipped cream, powdered sugar, or fresh berries for added flavor.

Notes

  • Microwave cooking times may vary depending on wattage and mug size, so watch closely to avoid overcooking.
  • For a richer flavor, use melted butter instead of vegetable oil.
  • Do not overmix the batter to keep the brownie tender and fudgy.
  • Serve the brownie warm for the best taste and texture.
  • Experiment with different types of chocolate chips such as dark or white chocolate for variations.
