Description

Classic Kotleti are traditional Russian-style meatballs made from ground chicken mixed with onions, eggs, mayonnaise, and soaked bread for a tender texture. These pan-fried patties are crispy on the outside and juicy inside, perfect as a main dish or appetizer.

Ingredients

Main Ingredients

  • 3 lb ground chicken
  • 2 eggs
  • 1 tbsp mayonnaise
  • 1/2 medium onion, grated
  • 1/2 cup milk
  • 3 bread slices

Seasonings

  • 1 tbsp salt (adjust to taste)
  • 1 tsp ground black pepper (adjust to taste)
  • Oil (for frying)

Instructions

  1. Soak the Bread: Soak the bread slices in milk for about 10 minutes until soft, then shred them into small pieces to help bind the mixture and add moisture.
  2. Combine Ingredients: In a large bowl, mix the ground chicken with eggs, mayonnaise, shredded bread, and grated onion. Season with salt and ground black pepper according to taste. Mix thoroughly for an even consistency.
  3. Preheat Oil: Heat a sufficient amount of oil in a frying pan over medium heat to prepare for frying the Kotleti.
  4. Form and Fry Patties: Spoon equal portions of the meat mixture into the hot oil, shaping them into patties and leaving some space between each. Fry each side for about 4-5 minutes until golden brown and cooked through.
  5. Serve: Remove the Kotleti from the pan and drain excess oil on paper towels. Serve warm as a main course or appetizer.

Notes

  • Adjust salt and pepper according to your preference for seasoning.
  • Make sure the oil is hot enough before frying to avoid greasy patties.
  • You can use any type of bread; white or whole wheat works well.
  • For a lower-fat option, drain excess oil or bake instead of frying.
  • These meatballs can be frozen uncooked for later use.
