Description

This classic Potato Salad recipe combines tender Yukon Gold potatoes with a creamy mayonnaise-based dressing infused with pickle relish, mustard, apple cider vinegar, and fresh dill. Enhanced with crunchy celery, sweet onion, and chopped hard-boiled eggs, this salad is perfect for picnics, barbecues, or as a flavorful side dish for any meal.

Ingredients

Potatoes

  • 4 lbs Yukon Gold potatoes (or red potatoes)

Dressing

  • 2 cups mayonnaise
  • 1/2 cup pickle relish
  • 1 tbsp mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp paprika
  • 1 tbsp fresh dill

Add-Ins

  • 1 small red or sweet onion (chopped or diced)
  • 2 celery stalks (chopped or diced)
  • 3 peeled hard-boiled eggs (chopped or diced)

Instructions

  1. Boil Potatoes: Quarter the potatoes and place them into a large pot with enough water to cover them by about 1 inch. Bring the water to a boil, then reduce to a simmer. Cook the potatoes for 13-15 minutes, or until they are fork tender.
  2. Prepare Potatoes: Drain the potatoes immediately once cooked. Remove any loose peels and chop the potatoes into approximately 1/2-inch chunks or your preferred size. Set the chopped potatoes aside and allow them to cool.
  3. Make Dressing: In a mixing bowl, combine mayonnaise, pickle relish, mustard, apple cider vinegar, salt, pepper, and paprika. Mix thoroughly until well incorporated.
  4. Add Vegetables and Eggs: Add the chopped onion, celery, hard-boiled eggs, and fresh dill to the dressing mixture. Stir until everything is evenly combined.
  5. Toss Potatoes with Dressing: Gently fold the cooled chopped potatoes into the mayonnaise mixture, making sure the potatoes are fully coated without breaking them up.
  6. Garnish: Optionally, sprinkle additional paprika and fresh dill on top for extra color and flavor.
  7. Chill Before Serving: Cover the potato salad and refrigerate it for at least four hours to allow the flavors to meld and the salad to chill thoroughly before serving.

Notes

  • Using Yukon Gold potatoes gives a creamy texture, but red potatoes can be used for a firmer bite.
  • Ensure potatoes are cooled before mixing with the dressing to prevent it from becoming watery.
  • For a tangier flavor, increase the amount of apple cider vinegar or add a splash of lemon juice.
  • Hard-boiled eggs add protein and richness to the salad but can be omitted for a vegetarian version.
  • For best results, prepare the salad a day in advance to let flavors develop fully.
