Description

This delicious Cajun Chicken recipe features tender boneless skinless chicken breasts seasoned with a robust blend of Cajun spices, seared to a golden crust, and simmered in a creamy, flavorful sauce made with Rotel tomatoes, garlic, and cheddar jack cheese. Perfectly balanced with a touch of heat and zesty lime, this dish is a satisfying, hearty meal ideal for serving with rice, beans, or a fresh salad.

Ingredients

Sauce Ingredients

  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (or half and half)
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar (light preferred)
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes

Chicken

  • 2 large boneless skinless chicken breasts
  • 1 ½ teaspoons Cajun seasoning
  • 3 tablespoons flour
  • 1-2 tablespoons olive oil or avocado oil

Sauce Preparation

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 10 oz Rotel diced tomatoes with green chilies (juice reserved, about ¼ cup)
  • ¾ cup shredded cheddar jack cheese
  • 2 teaspoons lime juice
  • Lime wedges, for serving
  • Fresh cilantro, roughly chopped, for garnish

Instructions

  1. Prep Work: Drain and reserve about ¼ cup of the juice from the Rotel diced tomatoes with green chilies. Combine the chicken broth, heavy cream, honey, hot sauce, Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes in a large measuring cup or bowl with a spout and set aside.
  2. Prepare the Chicken: Slice the chicken breasts in half lengthwise to create thinner cutlets. Place them between plastic wrap and gently pound with the textured side of a meat mallet until they are approximately ½ inch thick. Season each side evenly with 1 ½ teaspoons Cajun seasoning, then sprinkle and rub 3 tablespoons flour over both sides of the chicken. This helps create texture, prevents sticking, and will aid in thickening the sauce later.
  3. Sear the Chicken: Heat 1 to 2 tablespoons of olive or avocado oil in a large skillet over medium-high heat. Sear the chicken in batches for about 4-5 minutes per side, until a golden crust forms. Transfer the seared chicken to a plate and set aside.
  4. Deglaze and Start the Sauce: Reduce heat to medium and add the reserved tomato juice to the skillet. Using a silicone spatula, scrape the bottom and sides of the pan to loosen any flavorful browned bits (fond) left from searing the chicken. This adds depth to the sauce.
  5. Cook Garlic and Butter: Add the butter and minced garlic to the skillet and cook for 1 minute until fragrant and the butter is melted.
  6. Make a Roux: Stir in 3 tablespoons flour and cook continuously for about 2 minutes, making sure to remove the raw flour taste and create a roux.
  7. Add Sauce Mixture: Slowly pour the prepared sauce mixture from step 1 into the skillet in small splashes, stirring continuously to combine and avoid lumps.
  8. Simmer Sauce: Bring the sauce to a boil, then reduce the heat to maintain a gentle simmer. Stir in the drained diced tomatoes (without the juice) and let the sauce simmer for 5-7 minutes, allowing flavors to meld and the sauce to thicken and concentrate.
  9. Finish the Sauce: Reduce heat to low and gradually sprinkle in the shredded cheddar jack cheese, stirring continuously until melted and fully incorporated. Slowly stir in 2 teaspoons lime juice to brighten the flavors.
  10. Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning sauce over the top. Let the chicken simmer uncovered for 4 minutes to absorb flavors and finish cooking.
  11. Final Touches: Add fresh lime wedges to the skillet and simmer for 1 more minute. Remove from heat, sprinkle chopped fresh cilantro over the dish, and serve hot. This Cajun chicken pairs wonderfully with rice, beans, or a fresh salad.

Notes

  • For a lighter option, substitute half and half for the heavy cream without compromising creaminess.
  • Use avocado oil instead of olive oil for a higher smoke point and subtle flavor.
  • Reserve tomato juice to add depth and acidity to the sauce during deglazing.
  • The flour coating on the chicken helps provide a crust and thickens the sauce slightly.
  • Adjust hot sauce and cayenne pepper to suit your preferred spice level.
  • Serve with steamed rice, black beans, or a crisp green salad for a complete meal.
  • Use a meat mallet cautiously to avoid tearing the chicken while pounding to an even thickness.
