Description

This creamy chicken broccoli and cheese casserole is a low-carb, keto-friendly dish that's perfect for a satisfying and nutritious weeknight dinner. Tender chicken and fresh broccoli florets are cooked in a rich blend of heavy cream, parmesan, and garlic salt, then baked to perfection with a gooey mozzarella cheese topping.

Ingredients

Chicken and Vegetables

  • 1 tbsp oil
  • 1 lb boneless chicken
  • 20 oz broccoli florets

Sauce and Cheese

  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1/2 tsp garlic salt
  • 1 cup mozzarella cheese

Instructions

  1. Cook the Chicken: Preheat the oil in an oven-safe skillet over medium-high heat. Add the boneless chicken pieces and cook until golden brown on all sides, ensuring they are cooked through.
  2. Add Broccoli: Cut the broccoli florets into bite-size pieces and add them directly to the skillet with the cooked chicken, mixing evenly.
  3. Prepare Cream Sauce: In a bowl, combine the heavy cream, parmesan cheese, and garlic salt. Pour this creamy sauce mixture over the chicken and broccoli in the skillet, ensuring even distribution.
  4. Bake with Sauce: Transfer the skillet to a preheated oven set at 350°F (175°C) and bake for 10 minutes to allow the flavors to meld and the sauce to thicken slightly.
  5. Add Mozzarella Cheese: Remove the skillet from the oven and sprinkle the mozzarella cheese evenly over the top of the casserole.
  6. Finish Baking: Return the skillet to the oven and bake for an additional 7 minutes, or until the mozzarella cheese is melted and slightly golden on top.
  7. Serve: Remove from the oven and serve immediately while the cheese is warm and gooey for the best flavor and texture.

Notes

  • This recipe is low-carb and keto-friendly, making it suitable for those following ketogenic or low-carb diets.
  • Using an oven-safe skillet allows you to cook on the stovetop and finish in the oven without extra transfer.
  • You can substitute fresh broccoli with frozen florets if desired; just thaw and drain excess water before use.
  • For a richer flavor, consider adding herbs like thyme or rosemary to the cream sauce.
  • Ensure the chicken is cooked thoroughly before baking to avoid undercooked poultry in the casserole.
