Finished with fresh kale and optional pepitas for a delightful crunch, this soup delivers layers of flavor and a velvety texture, ideal for a healthy and satisfying vegetarian lunch or dinner.

Ingredients

Vegetables

  • 1 yellow onion, diced
  • 1 carrot, diced
  • 1 celery rib, diced
  • 3 garlic cloves, minced
  • 1 1/2 lbs sweet potatoes, peeled and diced into 1/2-inch pieces
  • 2 cups chopped kale, ribs removed

Spices and Seasonings

  • 1 tablespoon freshly grated ginger (about 1-inch piece)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • Dash of crushed red pepper flakes

Liquids and Other Ingredients

  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 15 oz can chickpeas, rinsed and drained
  • 13.5 oz can full fat coconut milk

Garnish (Optional)

  • Pepitas
  • Crushed red pepper flakes

Instructions

  1. Sauté the base vegetables: In a large Dutch oven or soup pot, heat the olive oil over medium-high heat. Add the diced onion, carrot, and celery, stirring occasionally. Sauté until the vegetables soften and become fragrant, about 5 minutes. Add the minced garlic and cook for an additional 1 minute to release its aroma.
  2. Add spices and ginger: Stir in the freshly grated ginger, salt, black pepper, ground cumin, ground turmeric, and a dash of crushed red pepper flakes. Mix well to evenly coat the sautéed vegetables with the spices.
  3. Cook sweet potatoes in broth: Add the diced sweet potatoes and stir to coat them with the spiced vegetable mixture. Pour in the vegetable broth and stir to combine. Cover the pot with its lid and bring the soup to a boil over medium-high heat. Once boiling, reduce heat to a simmer and place the lid slightly ajar to allow steam to escape. Let it simmer gently until the sweet potatoes are tender, about 25 to 30 minutes.
  4. Add chickpeas, coconut milk, and kale: Stir the rinsed chickpeas, full-fat coconut milk, and chopped kale into the soup. Continue simmering for 3 to 5 minutes until the kale wilts and the soup is heated through. Taste the soup and adjust seasoning with additional salt and pepper as needed.
  5. Serve and garnish: Ladle the hot soup into bowls. If desired, garnish with pepitas and an extra sprinkle of crushed red pepper flakes for added texture and a mild kick of heat. Enjoy this creamy, wholesome soup immediately.

Notes

  • For a smoother texture, blend part or all of the soup with an immersion or regular blender before adding kale.
  • Adjust the level of crushed red pepper flakes based on spice preference.
  • Use full-fat coconut milk for the creamiest texture; light coconut milk may yield a thinner soup.
  • This soup stores well and tastes even better the next day. Refrigerate for up to 3 days or freeze for up to 2 months.
  • For a non-vegetarian version, vegetable broth can be substituted with chicken broth.
