Ingredients
Pasta
- 8 ounces uncooked orzo
Mushrooms & Vegetables
- 1 pound mixed mushrooms, sliced (half baby bella, half shiitake)
- 1 large shallot, minced
- 5 large garlic cloves, minced
- 2 handfuls fresh baby spinach
- 1/2 cup loosely-packed chopped fresh basil
- Zest and juice of 1 small lemon (optional)
Fats & Seasoning
- 3 tablespoons butter, divided
- 1/2 teaspoon crushed red pepper flakes
- Fine sea salt and freshly-ground black pepper, to taste
Dairy
- 1/2 cup heavy cream
- 1 ounce freshly-grated Parmesan cheese
Instructions
- Heat the water for the orzo: Bring a large saucepan of generously salted water to a boil to prepare for cooking the orzo.
- Brown the mushrooms: While the water heats, melt 1 tablespoon of butter in a large sauté pan over medium-high heat. Add half the sliced mushrooms and sauté for about 5 minutes, stirring occasionally, until nicely browned. Transfer to a clean plate. Repeat this process with another tablespoon of butter and the remaining mushrooms, then set all cooked mushrooms aside.
- Cook the orzo: Once the water is boiling, add the orzo and cook until just 2 minutes shy of al dente, as it will finish cooking in the sauce.
- Sauté the veggies: Add the remaining tablespoon of butter to the same sauté pan. Add the minced shallot, garlic, and crushed red pepper flakes and sauté for about 2 minutes, stirring frequently until fragrant. Stir in the browned mushrooms, heavy cream, and season generously with salt and pepper. Remove from heat if the pasta isn’t ready yet to prevent overcooking.
- Combine: Drain the orzo, reserving 1 cup of pasta cooking water. Add the orzo along with the reserved starchy water to the sauté pan. Return the pan to medium heat and cook, stirring frequently, until the orzo is perfectly al dente and the sauce has thickened slightly.
- Finish: Remove from heat and stir in the grated Parmesan cheese, fresh baby spinach, chopped basil, and lemon zest and juice if using. Gently mix until the spinach wilts and everything is well combined. If the mixture seems too dry, add more pasta water to loosen the sauce. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.
- Serve: Plate the creamy garlic mushroom orzo while warm and garnish with extra Parmesan cheese if desired. Enjoy this rich and flavorful dish immediately.
Notes
- Using half baby bella and half shiitake mushrooms provides a great balance of flavors and textures, but feel free to substitute with cremini, porcini, or your favorite mushrooms.
- Reserving pasta water is essential as it helps to loosen and bind the creamy sauce to the orzo perfectly.
- If you prefer a lighter option, substitute half-and-half for heavy cream, though the sauce will be less rich.
- For a vegan variation, omit the butter, cream, and Parmesan and substitute with plant-based alternatives, though the flavor profile will differ.
- Adding lemon zest and juice brightens the dish but can be omitted if you prefer a richer flavor without acidity.
