Ingredients
Seafood
- 1.5 lb cod, cut into 2-inch cubes (alternatives: sea bass, halibut, snapper, tilapia)
- 1 lb shrimp, shelled and deveined
Marinade & Seasonings
- 2 tablespoons lime juice, plus more for seasoning
- 5-6 garlic cloves, minced (divided)
- 3 tablespoons ginger, finely minced
- 1/2 teaspoon black pepper, freshly ground
- Salt, to taste
- 1 teaspoon red chili flakes (optional)
Vegetables
- 1 large onion, sliced
- 1 medium red bell pepper, chopped or sliced
- 1 medium yellow bell pepper, chopped or sliced
- 1 medium orange bell pepper, chopped or sliced
- 2 large tomatoes, seeded and chopped (divided)
Liquids & Oils
- 2 tablespoons oil
- 1 can coconut milk (13.5 oz / 450 ml)
- 1.5 cups fish stock
Herbs
- 1/3 cup cilantro, chopped
Instructions
- Marinate the Seafood: In a large bowl, combine cod cubes and shrimp with salt, black pepper, lime juice, ginger, and half of the minced garlic. Mix well to coat and refrigerate for about 30 minutes to let the flavors infuse.
- Sauté Vegetables: Heat 2 tablespoons of oil in a large pan over medium heat. Add the sliced onions, remaining garlic, and chopped bell peppers. Stir frequently and cook until softened, about 3-4 minutes.
- Add Tomatoes and Seafood: Stir in half of the chopped tomatoes followed immediately by the marinated seafood. Cook together for about one minute to slightly sear the seafood.
- Simmer Stew: Pour in the coconut milk and fish stock. Add red chili flakes if using. Cover and simmer over low-medium heat for 8-10 minutes, or until the seafood is cooked through. Season with salt to taste.
- Finish and Garnish: Add the remaining tomatoes and cook for an additional minute to allow the flavors to meld. Stir in chopped cilantro just before serving. Adjust lime juice or seasoning as desired.
Notes
- Marinating the seafood enhances the flavor and tenderizes it.
- You can substitute the cod with other firm white fish like sea bass, halibut, snapper, or tilapia.
- If you prefer less heat, omit the red chili flakes.
- Serve the stew over steamed rice or with crusty bread for a complete meal.
- To keep the seafood tender, avoid overcooking during simmering.
