Ingredients
Main Ingredients
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2-3 cloves garlic, minced
- 1 lb ground beef
- 1 red bell pepper, diced
- 1 large tomato, chopped
- 1/2 jalapeno, chopped
- 1 cup heavy cream
- 2 tbsp taco seasoning
- Salt, to taste
- Black pepper, to taste
- 1 1/2 cups beef broth
Toppings
- Fresh cilantro, chopped
- Avocado, sliced
- Mozzarella cheese, shredded
- Jalapeno, sliced
- Lime, juiced and sliced
Instructions
- Heat olive oil and cook onions: Warm a large pot or Dutch oven over medium-high heat. Add olive oil and finely chopped onions. Cook for 3-5 minutes until the onions become translucent and fragrant.
- Add garlic and brown ground beef: Stir in minced garlic and add the ground beef. Cook for 7-8 minutes, breaking up the meat and stirring frequently until the beef is browned and fully cooked through.
- Add vegetables and seasonings: Mix in the diced red bell pepper, chopped tomato, chopped jalapeno, heavy cream, taco seasoning, salt, and black pepper. Stir well and cook for 4-5 minutes until the tomatoes soften and the ingredients are well combined.
- Add beef broth and simmer: Pour in the beef broth and stir thoroughly. Lower the heat to a simmer and cook uncovered for 15-20 minutes to allow the soup to thicken and flavors to meld.
- Serve with toppings: Ladle the soup into bowls. Garnish with chopped fresh cilantro, sliced avocado, shredded mozzarella cheese, sliced jalapeno, and drizzle fresh lime juice over each serving. Add lime slices on the side for extra zest.
Notes
- For a spicier soup, increase the amount of jalapeno or add chili powder to the seasoning.
- Ground turkey or chicken can be used instead of beef for a lighter option.
- To make this soup gluten-free, ensure the taco seasoning is gluten-free or make your own blend.
- Sour cream can be added as an alternative topping for extra creaminess.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
