Ingredients
Quinoa
- 1 bag Success Tri-Color Boil in Bag Quinoa (typically 8.5 oz)
Chocolate Layer
- 1 cup dark chocolate chips
- 2 tablespoons creamy peanut butter
- Pinch of flaky sea salt
Instructions
- Cook the Quinoa: Prepare the quinoa according to package instructions by boiling the bag in water. Once cooked, drain and let it cool slightly to handle.
- Spread and Bake Quinoa: Spread the cooked quinoa onto a baking sheet in a thin, even layer to ensure uniform crisping during baking.
- Bake the Quinoa: Place the baking sheet in a preheated oven at 325°F (163°C) for 10 minutes. Remove and stir the quinoa to promote even baking, then continue baking for an additional 15 minutes, stirring every 5 minutes until the quinoa is golden and crispy.
- Cool Quinoa: Allow the baked quinoa to cool completely on the sheet, which helps it firm up and retain crispiness.
- Melt the Chocolate: Place the dark chocolate chips in a microwave-safe bowl. Microwave at 50% power for 1-2 minutes, stirring every 30 seconds to prevent burning and ensure smooth melting.
- Prepare Chocolate Base: Spread the melted chocolate in a thin, even layer onto parchment paper, wax paper, or a silicone baking mat to form the base of the bark.
- Top with Peanut Butter and Quinoa: Drizzle the creamy peanut butter evenly over the chocolate layer. Then sprinkle about 1/3 cup of the crispy quinoa on top, followed by a pinch of flaky sea salt to enhance flavor contrast.
- Freeze the Bark: Place the bark in the freezer for 1 to 2 hours, or until it is firm and set.
- Serve and Store: Once firm, break the bark into pieces. Store any leftovers in the freezer to maintain crispness and freshness.
Notes
- Use a silicone baking mat or parchment paper to prevent sticking when spreading the chocolate.
- Stir the quinoa periodically during baking to ensure all grains crisp evenly without burning.
- Adjust peanut butter drizzle amount based on preference for sweetness and creaminess.
- Store the bark in an airtight container in the freezer for best texture and shelf life.
- This recipe can be adapted with other nut butters or chocolate types according to dietary preferences.
