Description

A comforting and hearty Crockpot Chicken Noodle Soup recipe featuring tender shredded chicken, fresh vegetables, and fusilli noodles slow-cooked to perfection. This easy-to-make soup is perfect for a cozy meal, combining wholesome ingredients and savory herbs for a rich, flavorful broth.

Ingredients

Soup Ingredients

  • 1 ½ pounds chicken breasts (boneless and skinless)
  • 1 small yellow onion (peeled and diced)
  • 3 medium carrots (peeled and diced or cut into coins)
  • 3 celery stalks (sliced)
  • 3 large garlic cloves (finely minced)
  • 2 fresh rosemary sprigs
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 6 cups chicken broth

Noodles and Garnish

  • 6 ounces fusilli noodles
  • Fresh chopped parsley (optional for serving)

Instructions

  1. Combine Ingredients: Add the chicken breasts, diced onion, carrots, sliced celery, minced garlic, rosemary sprigs, bay leaf, kosher salt, and black pepper to the slow cooker. Pour the chicken broth over the ingredients and gently stir to combine everything evenly.
  2. Slow Cook the Soup: Cover the slow cooker and cook on low heat for 6 to 8 hours or on high heat for 4 to 6 hours until the chicken is tender and fully cooked through.
  3. Shred the Chicken: Remove the cooked chicken breasts from the slow cooker, then shred the meat using two forks. Discard the bay leaf and rosemary sprigs from the soup.
  4. Cook the Noodles Separately: Prepare the fusilli noodles on the stovetop according to the package directions. Drain the noodles thoroughly to prevent the broth from becoming too thick or starchy.
  5. Combine and Warm: Add the shredded chicken and cooked noodles back into the slow cooker. Stir well to combine all the components, then cook for a few more minutes to allow everything to warm through evenly.
  6. Serve: Ladle the hot soup into bowls and garnish with fresh chopped parsley if desired. Enjoy immediately for a comforting meal.

Notes

  • Cooking the noodles separately prevents them from absorbing too much broth and becoming mushy.
  • You can substitute fusilli with any other pasta shape like egg noodles or rotini.
  • Adjust salt and pepper according to your taste preference.
  • For added flavor, consider adding a squeeze of lemon juice or a dash of hot sauce when serving.
  • If you want thicker soup, remove the lid in the last 30 minutes of cooking to allow some liquid to evaporate.
