This recipe includes steps for preparation, baking, freezing, and reheating, making it an ideal make-ahead breakfast option for busy mornings.
Ingredients
Egg Mixture
- 6 large eggs (lightly beaten)
- 1/4 cup whole milk
- 1 tablespoon butter
Sandwich Assembly
- 4 large butter croissants
- 4 tablespoons mayonnaise
- 4 teaspoons Dijon mustard
- 6 ounces turkey (thinly sliced)
- 6 slices cheddar cheese
Instructions
- Prepare the egg mixture: In a medium bowl, whisk together the 6 large eggs with 1/4 cup whole milk until fully combined and smooth.
- Scramble the eggs: Heat 1 tablespoon butter in a large skillet over medium heat. Pour the egg mixture into the skillet and scramble, cooking until the eggs are thickened and no liquid remains. Remove from heat and set aside.
- Assemble the sandwiches: Slice each of the 4 large butter croissants in half. Spread 1 tablespoon mayonnaise on one half and 1 teaspoon Dijon mustard on the other half of each croissant. Layer the scrambled eggs, 6 ounces sliced turkey, and 1.5 slices cheddar cheese per sandwich, then close with the top half of the croissant.
- Bake the sandwiches: Preheat the oven to 450°F (232°C). Wrap each sandwich tightly in foil and place on a baking sheet. Bake for 15-20 minutes until the cheese is fully melted and the sandwich is heated through.
- Freeze for later: For make-ahead convenience, tightly wrap each assembled sandwich in plastic wrap and store in the freezer until ready to eat.
- Reheat from frozen: Remove plastic wrap and place the sandwich on a microwave-safe dish with a paper towel. Microwave for 1-2 minutes until heated through. Alternatively, preheat the oven to 450°F, wrap sandwiches in foil, place on a baking sheet, and bake for about 15 minutes or until cheese has melted completely. Enjoy your warm breakfast sandwich!
Notes
- You can substitute turkey with ham or cooked bacon if preferred.
- For a lower fat version, use reduced-fat cheese and turkey breast.
- The sandwiches freeze well and can be reheated quickly for a fast breakfast option.
- If you do not have Dijon mustard, yellow mustard or a spicy brown mustard can be used as alternatives.
- Make sure to wrap the sandwiches well before freezing to avoid freezer burn.
