Description

A refreshing and simple cucumber tomato salad that combines crisp cucumber, sweet cherry tomatoes, and sharp red onion tossed in a light honey-olive oil dressing, garnished with fresh herbs. Perfect as a quick side dish or a healthy snack.

Ingredients

Vegetables

  • 1 English cucumber (no need to peel)
  • 10 ounces grape or cherry tomatoes (halved)
  • ½ small red onion (thinly sliced, about ½ cup)

Dressing

  • 1 teaspoon honey
  • ½ teaspoon Kosher salt or fine sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Garnish (optional)

  • 1 tablespoon chopped fresh parsley, dill, and/or basil

Instructions

  1. Prepare the cucumber: Trim off the two ends of the cucumber, then halve it lengthwise. Slice into ¼-inch thick half rounds to create bite-sized pieces.
  2. Combine vegetables: In a medium bowl, place the sliced cucumber, halved grape or cherry tomatoes, and thinly sliced red onion.
  3. Make the dressing: In a small bowl, whisk together olive oil, honey, salt, and black pepper until well blended.
  4. Toss the salad: Pour the dressing over the vegetables and gently toss to coat everything evenly.
  5. Add herbs and serve: Stir in the chopped fresh herbs such as parsley, dill, or basil if using. Serve the salad immediately or chill it in the refrigerator for 1 to 2 hours to allow the flavors to meld before serving.

Notes

  • Using a seedless English cucumber avoids the need to peel due to its tender skin.
  • Cherry or grape tomatoes add sweetness and texture; plum tomatoes can be used but may be less sweet.
  • Fresh herbs such as parsley, dill, or basil are optional but enhance the flavor greatly.
  • This salad is best served fresh, but chilling allows flavors to develop.
  • Adjust salt and pepper according to taste preferences.
  • Honey balances the acidity of the tomatoes and the bite of the onion.
