Description
Deliciously rich dark chocolate covered strawberries are an elegant and easy treat. Fresh ripe strawberries are dipped in smooth melted dark chocolate and optionally drizzled with white chocolate for a beautiful finish. Perfect for special occasions or a simple indulgence, these chocolates balance fresh fruit with luscious dark chocolate.
Ingredients
Strawberries
- 1 pint fresh ripe strawberries (about 1 pound)
Dark Chocolate Coating
- 2 cups dark chocolate chips (60% cacao recommended, e.g., Ghirardelli Premium Baking Chips)
Optional Decoration
- 1 cup white chocolate chips (for drizzling)
Instructions
- Prepare the strawberries: Rinse the strawberries in a strainer under cold water if they are organic. For conventional strawberries, soak them in a bowl with four parts water and one part white vinegar for 20 minutes to clean thoroughly, then rinse well.
- Dry the strawberries: Transfer the rinsed strawberries to a paper towel-lined sheet pan and pat dry thoroughly. Ensuring they’re dry is crucial so the chocolate adheres properly.
- Melt the dark chocolate: Place the dark chocolate chips into a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until about 90% melted.
- Temper the chocolate: Stir the remaining chocolate until fully melted and smooth to achieve a glossy texture.
- Dip the strawberries: Hold each strawberry by the stem and dip diagonally into the melted chocolate, swirling slightly to coat but leaving the top of the strawberry exposed.
- Remove excess chocolate: Let excess chocolate drip off, gently tap the berry against the bowl edge, then place it on a parchment-lined pan.
- Optional white chocolate drizzle: Melt the white chocolate chips similarly and drizzle over the chilled dark chocolate-covered strawberries for decoration.
- Chill and serve: Refrigerate the dipped strawberries for a few minutes to set the chocolate, then enjoy.
Notes
- Use fresh, ripe strawberries with stems intact to make dipping easier.
- Dry strawberries thoroughly to ensure chocolate sticks well.
- Tempering the chocolate ensures a shiny finish and prevents chocolate from blooming.
- Store coated strawberries in the refrigerator and consume within 1-2 days for best freshness.
- White chocolate drizzle is optional but adds a decorative touch.
- Use parchment paper to prevent sticking while chocolate sets.
