Description

Dum Aloo is a classic Punjabi dhaba-style potato curry featuring succulent baby potatoes cooked in a rich, aromatic tomato-cashew gravy with a blend of spices. This vibrant and flavorful dish is slow-simmered to perfection, absorbing all the spices and creating a delightful comfort food perfect for pairing with roti or rice.

Ingredients

Potatoes

  • 20 baby potatoes (boiled & peeled)
  • Oil (for frying)

For Tempering and Gravy

  • 3 tbsp oil
  • 1 tsp cumin seeds
  • 2 bay leaves
  • 1 pod black cardamom
  • 3 pods green cardamom
  • ½ tsp cloves
  • 1 onion (finely chopped)
  • 1 tsp ginger garlic paste
  • ½ tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp salt
  • 1½ cup tomato puree (from approx. 2 tomatoes blended)
  • ¼ cup cashew paste (blend 5 cashews to smooth paste)
  • ¼ cup curd (yogurt)
  • 2 cup hot water
  • 2 tbsp chopped fresh coriander leaves
  • 2 tbsp kasuri methi (dried fenugreek leaves, crushed)
  • ½ tsp garam masala

Instructions

  1. Pressure Cook Potatoes: Pressure cook 20 baby potatoes for one whistle. Once cooled, peel and prick each potato to allow flavors to seep in.
  2. Fry Potatoes: Heat 4 tbsp oil in a kadai or deep pan. Fry the pricked potatoes, stirring occasionally, until they turn golden brown. Remove and keep aside.
  3. Prepare Tempering Spices: In the same kadai, heat 3 tbsp oil. Add 1 tsp cumin seeds, 2 bay leaves, 1 black cardamom pod, 3 green cardamoms, and ½ tsp cloves. Saute on low flame until aromatic to release the spice flavors.
  4. Sauté Onions and Ginger-Garlic: Add finely chopped onions and 1 tsp ginger garlic paste. Cook on low heat until onions turn golden brown, enhancing the base flavor.
  5. Add Dry Spices: With flame low, add ½ tsp turmeric, 1 tsp chili powder, 1 tsp coriander powder, ½ tsp cumin powder, and 1 tsp salt. Stir and cook until the spices become aromatic, about 1-2 minutes.
  6. Add Tomato and Cashew Paste: Incorporate 1½ cup tomato puree and ¼ cup cashew paste into the pan. Cook until oil begins to separate from the masala, indicating the gravy is cooked through.
  7. Add Curd: Mix in ¼ cup curd and continue cooking on low flame until oil once again separates from the mixture, signaling a rich, cooked gravy.
  8. Combine Fried Potatoes: Gently add the fried potatoes into the gravy, mixing carefully to coat the potatoes without breaking them.
  9. Add Water and Simmer: Pour in 2 cups of hot water to adjust the gravy consistency. Cover the pan and let it simmer gently for 20 minutes, allowing the potatoes to soak in the flavors.
  10. Finish with Herbs and Spices: After 20 minutes, add 2 tbsp chopped coriander, 2 tbsp crushed kasuri methi, and ½ tsp garam masala. Mix well to distribute the final flavors.
  11. Serve: Serve the flavorful Dum Aloo hot, ideally with roti, naan, or steamed rice for a comforting meal.

Notes

  • Pricking the potatoes before frying helps the spices penetrate deeply, enhancing flavor.
  • Be gentle when mixing fried potatoes into the gravy to prevent them from breaking apart.
  • Kasuri methi adds a unique aroma; if unavailable, you can substitute with a small pinch of dried fenugreek seeds or omit.
  • You can adjust the spice levels according to your taste by modifying chili powder quantity.
  • This recipe can be made ahead and tastes even better the next day as flavors develop.
