Ingredients
Proteins
- 3 boneless skinless chicken breasts (approximately 1 pound)
Vegetables
- 1 medium onion
- 3 bell peppers (red, yellow, green or orange)
- 1 lime
Seasonings & Oils
- 3 tablespoons olive oil (divided)
- 1 teaspoon chili powder
- ¾ teaspoon salt (divided, more to taste)
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon cumin (optional)
Instructions
- Prepare the Vegetables: Cut the onion into slivers and slice the bell peppers into strips, setting them aside for cooking.
- Make the Spice Mixture & Marinate Chicken: In a separate bowl, combine 1 tablespoon olive oil, juice of half the lime, chili powder, smoked paprika, onion powder, black pepper, cumin, and half a teaspoon of salt. Cut the chicken breasts into strips and toss them thoroughly with this spice mixture to coat evenly.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add half of the chicken strips and cook for about 3 to 5 minutes until just cooked through. Remove the cooked chicken and set aside. Repeat the process with the remaining chicken strips.
- Sauté the Vegetables: Add the last tablespoon of olive oil to the skillet. If you soaked the onions, ensure they are drained well. Cook the onions for 2 minutes, then add the sliced bell peppers. Season with the remaining quarter teaspoon salt. Toss and cook the vegetables for an additional 2 minutes or until just heated through.
- Combine & Serve: Return the cooked chicken strips to the skillet with the vegetables and stir to combine everything evenly. Squeeze the remaining half lime over the top for a fresh, zesty finish. Serve immediately, ideally over warmed tortillas.
Notes
- Soaking onions in cold water before cooking can reduce their pungency and soften the flavor.
- Adjust the salt to taste if preferred.
- Add cumin for an optional deeper smoky flavor.
- Serve fajitas with warm tortillas, sour cream, guacamole, or salsa for a complete meal.
