Description
These Easy Chocolate Marshmallow Squares with Rice Krispies make a nostalgic, delightful treat combining semi-sweet chocolate, creamy peanut butter, and crunchy marshmallows into crispy, chewy squares. Perfect for parties or a sweet snack, this no-bake recipe requires minimal effort and chill time to achieve irresistibly tasty results.
Ingredients
Chocolate Mixture
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 cup crunchy peanut butter
- 1/4 cup butter
Mix-ins
- 2 cups Rice Krispie cereal
- 3 cups miniature rainbow marshmallows (kept frozen)
Instructions
- Prep the Pan: Place the bag of marshmallows in the freezer to keep them firm and line a 9x9 inch baking pan with parchment paper. This will help you easily lift and cut the squares later.
- Melt the Chocolate & Butter: In a large microwave-safe bowl or on the stovetop over low heat, melt together the semi-sweet chocolate chips, butterscotch chips, peanut butter, and butter. If microwaving, heat in 30 second intervals, stirring between each, for about 2 minutes until smooth. Add a pinch of salt if using unsalted butter to enhance flavor.
- Mix in Cereal & Marshmallows: Remove the melted mixture from heat and allow it to cool slightly to avoid melting the marshmallows. Gently fold in the Rice Krispies cereal and frozen miniature marshmallows, stirring carefully to coat everything without crushing the cereal.
- Press into Pan: Transfer this mixture into the prepared pan and use a rubber spatula or spoon back to press down firmly and evenly create a compact layer.
- Cool and Set: Refrigerate the pan for about one hour, or until the chocolate topping has fully set. For faster setting, place the pan in the freezer for approximately 30 minutes.
- Cut and Enjoy: Once set, remove the block from the pan by lifting the parchment paper, cut into squares of your preferred size, and enjoy the delicious, nostalgic treat.
Notes
- Freezing marshmallows helps keep them from melting when combined with the warm chocolate mixture.
- You can substitute crunchy peanut butter with smooth if preferred.
- If you want an extra crunch, add chopped nuts to the mixture.
- Storing these squares in an airtight container in the refrigerator will keep them fresh for up to a week.
- For a gluten-free version, ensure the Rice Krispies cereal you use is certified gluten-free.
