Description

This Easy Gooey Butter Cake recipe features a rich and indulgent dessert with a buttery cake base topped with a creamy, sweet cream cheese layer. Perfectly balanced with a slightly jiggly center and golden edges, this cake is an irresistible treat that is simple to prepare and ideal for sharing.

Ingredients

Base

  • 1 egg
  • ½ cup (1 stick) unsalted butter, melted
  • 1 box (15.25 oz) yellow cake mix (Duncan Hines recommended)

Topping

  • 2 eggs
  • 1 block (8 oz) cream cheese, softened
  • 3½ cups powdered sugar, plus more for sprinkling

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 13x9-inch baking dish to prevent sticking.
  2. Make the Base Mixture: In a large bowl, whisk 1 egg. Add ½ cup of melted butter and the entire box of yellow cake mix. Stir everything together using a fork until well combined.
  3. Press Base into Pan: Evenly press the cake mix batter into the bottom of the greased baking dish using your hands or a spatula.
  4. Prepare Topping Mixture: Using the same bowl, beat the softened cream cheese with 2 remaining eggs and 3½ cups powdered sugar using a hand mixer on medium speed. Mix until the mixture is smooth and creamy with no lumps.
  5. Add Topping Layer: Pour the cream cheese mixture evenly over the cake batter layer in the pan, smoothing the top with a spatula if needed.
  6. Bake: Place the baking dish in the oven and bake for 38 to 42 minutes. The edges should turn a light golden brown, while the center will remain slightly jiggly when you gently shake the pan.
  7. Cool and Serve: Allow the cake to cool completely on a wire rack. Once cooled, sprinkle additional powdered sugar on top and cut the cake into squares for serving.

Notes

  • Using Duncan Hines yellow cake mix is recommended because it yields the ideal texture and flavor for this recipe.
  • Ensure the cream cheese is fully softened before beating to avoid lumps in the topping.
  • The slightly jiggly center indicates the perfect gooey texture; avoid overbaking.
  • For easier slicing, chill the cake after cooling completely.
  • This cake is best served at room temperature or slightly chilled.
