Ingredients
Zucchini Rings
- 3 medium zucchinis
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian herb blend
- 2 tablespoons grated Parmesan cheese
- Additional Italian herb blend, for topping
Dip
- 1 teaspoon olive oil
- Zucchini centers from sliced zucchinis
- 1/2 lemon, juiced
- 1 tablespoon milk
- 1 clove garlic
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Prepare zucchini rings: Slice the zucchinis into thick rounds. Use an apple corer to remove the seed centers from each slice, creating rings. Place the zucchini rings on the prepared baking sheet.
- Season and coat: Toss the zucchini rings with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon Italian herb blend, and 2 tablespoons grated Parmesan cheese until they are well coated. Spread them out evenly on the baking sheet, then sprinkle a little more Italian herb blend on top.
- Bake the rings: Bake the zucchini rings in the preheated oven for 20-25 minutes, or until they are crispy and golden brown.
- Sauté zucchini centers: While the rings bake, heat 1 teaspoon olive oil in a medium skillet over medium-high heat. Add the reserved zucchini centers and sauté for 3-5 minutes until they are fork tender. Remove from heat.
- Make the dip: Transfer the sautéed zucchini centers to a mini food processor. Add the juice of half a lemon, 1 tablespoon milk, 1 clove garlic, 1/2 teaspoon onion powder, and salt and pepper to taste. Pulse until smooth and creamy. Taste and adjust seasoning if needed.
- Serve: Serve the warm, crispy Parmesan zucchini rings alongside the lemon-garlic zucchini dip for a delightful appetizer or side dish.
Notes
- Using an apple corer to remove the zucchini centers creates perfect rings and minimizes waste by using the centers for the dip.
- Feel free to substitute milk with a plant-based alternative for a dairy-free version.
- If you prefer a stronger garlic flavor, add an extra clove to the dip.
- For a crispier texture, broil the rings for the last 2-3 minutes but keep a close eye to prevent burning.
- This recipe pairs well with grilled chicken or as a healthy snack on its own.
