Ingredients
Rice
- 1 ⅔ cups Uncooked Basmati Rice (yields about 5 cups cooked)
Vegetables
- 2 Shallots, diced
- 1 Red Bell Pepper, cored, seeded, and chopped
- 2 Celery Ribs, diced
- 2 Carrots, diced
Dressing
- ½ cup Chopped Fresh Parsley
- ¾ teaspoon Salt
- ½ teaspoon Pepper
- 5 Tablespoons Olive Oil
- 3 Tablespoons Lemon Juice
- ½ teaspoon Garlic Paste (or to taste)
- Minced Fresh Herbs (such as tarragon, basil, etc.)
Instructions
- Cook the Rice: Bring a large pot of lightly salted water to a boil. Add the basmati rice and cook like pasta for 10 to 15 minutes until tender but not breaking apart. Avoid overcooking to maintain texture.
- Prepare the Vegetables: While the rice cooks, wash and finely dice the shallots, red bell pepper, celery ribs, and carrots. Set aside for later mixing.
- Make the Dressing: In a small bowl, whisk together chopped fresh parsley, salt, pepper, olive oil, lemon juice, garlic paste, and minced fresh herbs to create a flavorful dressing.
- Drain and Dry the Rice: Drain the cooked rice and rinse it quickly under cool water, making sure it doesn’t get cold. Spread it on a baking sheet lined with a kitchen towel, cover with another towel, and gently pat dry to remove excess moisture.
- Combine Ingredients: While the rice is still warm, transfer it to a large salad bowl. Add the prepared dressing and diced vegetables, then gently toss with a large spatula until evenly mixed. Adjust seasoning by tasting and adding salt if needed.
- Chill to Develop Flavors: Refrigerate the assembled rice salad for 30 minutes to allow all the flavors to meld beautifully.
- Serve: Serve the rice salad cold or at room temperature as a refreshing side or light main dish.
Notes
- The rice should be cooked al dente—not mushy or undercooked—to maintain a nice texture in the salad.
- Rinsing and drying the rice prevents it from becoming soggy and helps the dressing adhere better.
- Feel free to swap out or add fresh herbs like cilantro, mint, or dill to customize the flavor.
- This salad can be made ahead and stored in the fridge for up to 2 days.
- For added protein, consider mixing in chickpeas, grilled chicken, or feta cheese.
