Ingredients
Vegetables
- 1 pound baby potatoes
- 3 large bell peppers
Meat
- 12 oz turkey kielbasa
Seasonings and Oils
- 1 tbsp avocado oil
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/4 tsp sea salt
Instructions
- Preheat the oven: Set your oven to 450°F (232°C) to prepare for roasting the ingredients.
- Prepare the potatoes: Rinse the baby potatoes thoroughly under cold water. Cut each potato in half to create bite-sized pieces for even cooking.
- Season the potatoes: Place the halved baby potatoes in a large mixing bowl. Add 1 tablespoon of avocado oil, 1 teaspoon smoked paprika, 1/2 teaspoon dried thyme, and 1/4 teaspoon sea salt. Stir well to coat the potatoes evenly with the spices and oil.
- Start roasting the potatoes: Line a baking sheet with a silicone liner or parchment paper for easy cleanup. Spread the seasoned potatoes in a single layer on the sheet. Roast them in the preheated oven for 15 minutes to start softening and browning.
- Prepare the kielbasa and peppers: While the potatoes roast, slice the turkey kielbasa into coin-shaped pieces. Chop the three bell peppers into bite-sized chunks or strips.
- Add kielbasa and peppers to the sheet: After 15 minutes, take the baking sheet out of the oven. Add the sliced turkey kielbasa and chopped bell peppers to the partially cooked potatoes.
- Continue roasting: Return the baking sheet to the oven and roast everything together for an additional 10 minutes, allowing the kielbasa to warm through and the bell peppers to soften.
- Optional broil for extra browning: If you prefer a slightly browned and crispier kielbasa, switch the oven to broil and cook for 3 more minutes. This step is optional and not required for a delicious result.
Notes

- To make this recipe gluten-free, verify that the turkey kielbasa is labeled gluten-free as some brands may contain gluten.
- Leftovers store well refrigerated for up to 3 days and can be reheated in the oven or microwave.
