Description

This Farmer's Casserole is a hearty and comforting breakfast or brunch dish featuring diced hash brown potatoes, ham, peppers, and cheese baked with an egg custard. It's perfect for family gatherings or a satisfying start to your day.

Ingredients

Potatoes and Vegetables

  • 3 cups diced hash brown potatoes
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped green bell pepper
  • ¼ cup chopped green onions

Dairy and Protein

  • 1 cup shredded Cheddar cheese
  • 1 cup cubed fully cooked ham
  • 6 oz evaporated milk
  • 5 large eggs

Seasoning

  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Arrange Potatoes and Peppers: Place the diced hash brown potatoes into an 8-inch baking dish. Add the chopped red and green bell peppers evenly over the potatoes.
  3. Add Cheese, Ham, and Onions: Sprinkle the shredded Cheddar cheese evenly on top of the potatoes and peppers. Then add the cubed ham and chopped green onions, distributing them evenly throughout the dish.
  4. Prepare Egg Mixture: In a small bowl, whisk together the 5 large eggs, 6 ounces of evaporated milk, garlic powder, salt, and pepper until fully combined.
  5. Pour and Bake: Pour the egg mixture evenly over the contents of the baking dish. Place the dish in the preheated oven and bake for 55 to 60 minutes, or until a knife inserted in the center comes out clean, indicating the casserole is fully set and cooked through.

Notes

  • You can substitute fully cooked ham with cooked bacon or sausage for variation.
  • Feel free to add other vegetables like mushrooms or spinach for extra nutrition.
  • Let the casserole rest for 5-10 minutes after baking for easier slicing.
  • This dish stores well and can be reheated for a quick breakfast.
