Description

These Frozen Yogurt Granola Cups are a simple and refreshing no-bake treat perfect for a healthy snack or light dessert. Layers of crunchy granola mixed with peanut butter and honey form a sturdy base, filled with creamy Greek yogurt and topped with fresh berries and walnuts. After freezing for an hour, they become perfectly chilled and portable, making them ideal for quick snacks or lunchbox additions.

Ingredients

Base Mix

  • 1/4 cup peanut butter (or almond butter)
  • 1 Tablespoon honey (or agave syrup)
  • 3/4 cup granola

Filling & Toppings

  • 1 cup whole milk Greek yogurt
  • 1/2 cup sliced berries (or fruit of choice)
  • 1 Tablespoon chopped walnuts
  • Honey drizzle (optional)

Instructions

  1. Line Muffin Tin: Line a muffin tin with six paper or silicone cupcake liners to prepare for the granola base.
  2. Mix Peanut Butter, Honey, & Granola: In a small bowl, combine the peanut butter, honey, and granola into a sticky mixture.
  3. Distribute Into Cupcake Liners: Evenly divide the granola mixture among the cupcake liners in the muffin tin.
  4. Press Into Cups: Use a spoon or the bottom of a measuring cup to firmly press the granola mixture down into each liner, creating a sturdy cup shape.
  5. Fill With Yogurt: Spoon Greek yogurt into each granola cup, filling them to the top—approximately 2-3 tablespoons per cup.
  6. Add Toppings: Garnish each cup with sliced berries, chopped walnuts, and a drizzle of honey if desired for added flavor and texture.
  7. Freeze: Place the muffin tin in the freezer for 30 minutes to 1 hour until the yogurt cups are firm and set.
  8. Thaw & Remove: Let the cups thaw at room temperature for 2-3 minutes to loosen, then gently remove each yogurt cup from the liners and muffin tin.
  9. Enjoy Or Store: Serve immediately or store the frozen yogurt granola cups in an airtight container in the freezer for later consumption.

Notes

  • You can substitute peanut butter with almond butter or any nut butter of your choice.
  • Use agave syrup as a vegan-friendly alternative to honey.
  • Choose your preferred granola variety to customize sweetness and texture.
  • Prepare the cups in advance and store in the freezer for convenient on-the-go snacks.
  • Allow a few minutes of thawing before eating for easier removal from liners and better texture.
