Description

These Gingerbread Truffles are a delightful holiday treat combining creamy, tangy cream cheese with spicy gingersnap cookies, all coated in a smooth white chocolate shell. Perfectly festive and irresistible, these bite-sized truffles are easy to make and wonderfully festive for any occasion.

Ingredients

Main Ingredients

  • 1 bar (8 oz) full-fat cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups finely crushed gingersnap cookie crumbs (about 36 store-bought cookies)
  • 2 cups high quality white chocolate chips OR white melting wafers

For Garnish

  • Additional crushed gingersnap cookie crumbs or festive sprinkles

Instructions

  1. Prepare the truffle base: In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Using an electric hand mixer or stand mixer, beat the mixture until it is smooth and creamy, ensuring no lumps remain.
  2. Add cookie crumbs: Gradually add the finely crushed gingersnap cookie crumbs to the cream cheese mixture. Blend until thoroughly combined into a thick mixture that holds its shape when rolled.
  3. Shape the truffles: Using a 1 tablespoon cookie scoop, portion out the mixture and roll each portion into round balls with clean hands. Arrange the balls on a parchment-lined baking sheet, spacing them evenly.
  4. Chill the truffles: Place the baking sheet in the refrigerator and chill the truffles for 1 hour. This helps them firm up, making them easier to dip later.
  5. Melt the chocolate: When ready, melt the white chocolate chips or white melting wafers in a microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly between each until the chocolate is fully melted and smooth.
  6. Dip the truffles: Using a plastic fork with the middle prongs removed or a dipping tool, carefully dip each chilled truffle into the melted white chocolate to coat evenly. Tap the fork against the bowl edge to remove excess chocolate.
  7. Garnish and set: Immediately after dipping, place the coated truffle on parchment paper and sprinkle with additional crushed gingersnap crumbs or festive sprinkles while the coating is still wet. Repeat for all truffles.
  8. Final chill: Return the coated truffles to the refrigerator for 30 minutes or until the white chocolate coating is fully set and firm.
  9. Serve: Serve the gingerbread truffles chilled or at room temperature. They can remain out for up to 2 hours without losing texture or flavor. Enjoy your festive treat!

Notes

  • Be sure the cream cheese is fully softened to ensure a smooth truffle mixture.
  • Use high-quality white chocolate or melting wafers for the best flavor and smooth coating.
  • When rolling the truffles, keep your hands slightly chilled or lightly dusted with powdered sugar to prevent sticking.
  • The plastic fork with removed prongs helps prevent excess chocolate drips and allows easy tapping to remove extra coating.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • To vary flavors, try adding a pinch of cinnamon or nutmeg to the truffle mixture.
