Ingredients
Vegetables
- 2 ribs celery, diced
- 3 large carrots, peeled and sliced or diced
- 1/2 cup diced white onion
- 2 teaspoons minced garlic
Liquids & Broth
- 8-10 cups low sodium chicken broth
- 2 tablespoons olive oil
Seasonings & Herbs
- 1 teaspoon salt (adjust as desired)
- 1/2 teaspoon black pepper
- 1 teaspoon chicken bouillon
- 1/8 teaspoon dried rosemary
- 1/4 teaspoon dried oregano
Protein & Pasta
- 3 cups shredded rotisserie chicken
- 10 ounces gluten free pasta (brown rice pasta recommended)
Instructions
- Add to pot: In a large pot or Dutch oven, add the olive oil, diced onion, celery, and carrots.
- Saute: Sauté the vegetables for about 5-7 minutes until they begin to soften and become fragrant.
- Add all ingredients except pasta: Pour in the low sodium chicken broth (starting with 8 cups), salt, black pepper, chicken bouillon, dried rosemary, dried oregano, and shredded rotisserie chicken. Stir to combine.
- Add pasta: Bring the soup to a low boil, then stir in the gluten free pasta.
- Simmer: Let the soup simmer for about 10 minutes or just until the pasta is cooked through, stirring occasionally to prevent sticking.
- Remove from heat: Remove the pot from heat to prevent the noodles from becoming mushy.
- Taste and adjust: Taste the soup and adjust the seasonings by adding more salt or pepper if needed.
- Add broth if needed: Add additional chicken broth if you prefer a more brothy consistency, considering the noodles may absorb some liquid.
- Serve: Ladle the soup into bowls, garnish with fresh parsley and red pepper flakes if desired, and enjoy your comforting gluten free chicken noodle soup!
Notes
- Use low sodium chicken broth to control the salt content in the soup.
- Adjust salt and pepper to taste after simmering as flavors develop.
- Using rotisserie chicken saves preparation time and adds great flavor.
- Brown rice gluten-free pasta works well, but adjust cooking time based on pasta brand.
- Remove the soup from heat promptly once pasta is cooked to avoid mushy noodles.
- Fresh parsley and red pepper flakes add nice flavor and garnish but are optional.
