Ingredients
For the Cake:
- 3 3/4 cups all-purpose flour
- 3 1/4 cups granulated sugar
- 1 1/2 cups unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- 1 cup full-fat Greek yogurt
- 1 cup coconut oil or canola oil (coconut oil liquified)
- 4 large eggs
- 2 large egg yolks
- 6 tablespoons unsalted butter, melted
- 1 tablespoon vanilla extract
- 1 1/2 cups strong hot coffee or hot water
For the Frosting:
- 5 cups confectioners' sugar, sifted
- 1 1/4 cups unsweetened cocoa powder, sifted
- 2 sticks (8 ounces) unsalted butter, very soft
- 1/3 cup full-fat Greek yogurt
- 1/3 cup half and half
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
Instructions
- Preheat and Prepare Pans: Preheat your oven to 350ºF (175ºC). Prepare three 9-inch metal cake pans by generously spraying them with baking spray or buttering and lightly flouring them. Set aside.
- Mix Dry Ingredients: In a large bowl, or the bowl of a stand mixer, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk or stir with the paddle attachment until all ingredients are thoroughly mixed. Set aside.
- Combine Wet Ingredients: In a separate large bowl, mix together whole milk, Greek yogurt, coconut or canola oil, eggs, egg yolks, melted butter, and vanilla extract until well combined.
- Incorporate Wet into Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Then, carefully add the hot coffee or hot water to the batter. Beat on medium-low speed until evenly combined, taking care not to overmix to maintain cake texture.
- Bake the Cake: Divide the batter evenly among the three prepared cake pans. Bake in the preheated oven for 25-28 minutes, or until a toothpick or cake tester inserted into the center comes out clean.
- Cool the Cakes: Remove the cakes from the oven and allow them to cool in the pans for about 10 minutes. Then, remove from pans and transfer to wire racks to cool completely.
- Prepare the Frosting Dry Mix: While the cakes cool, sift together confectioners' sugar and cocoa powder, whisking well to remove lumps.
- Cream Butter: Using a handheld mixer or stand mixer fitted with a paddle attachment, beat the softened butter on medium-high speed for about 2 minutes until creamy.
- Add Frosting Ingredients: Reduce mixer speed to low and slowly add the sifted confectioners' sugar and cocoa powder mixture alternating with Greek yogurt and half and half. Add the vanilla extract and salt. Once all ingredients are added, beat on high speed for at least 1 minute until the frosting is light, creamy, and fully combined.
- Frost the Cake: Once the cake layers are completely cool, frost them as desired with the prepared Greek Yogurt Chocolate Frosting. Serve and enjoy!
Notes
- Use strong hot coffee to enhance the chocolate flavor, but hot water can be used as a substitute if preferred.
- Ensure not to overmix the batter after adding coffee to keep the cake tender and moist.
- Liquify coconut oil before measuring to ensure accurate quantity.
- Let the cake layers cool completely before frosting to prevent the frosting from melting.
- This recipe makes three 9-inch cake layers; adjust baking time if changing pan size.
