Description

A vibrant and flavorful Grilled Steak and Peach Salad combining tender marinated flank steak, sweet grilled peaches, creamy avocado, and fresh arugula. The salad is topped with grilled corn, tangy goat cheese, and a homemade balsamic rosemary dressing, perfect for a hearty and refreshing meal.

Ingredients

Salad Ingredients

  • 1 lb flank steak
  • 1 (8 oz) bag arugula
  • 2 avocados, sliced
  • 2 peaches, sliced
  • 2 cobs of corn, grilled and sliced off the cob
  • 1/2 cup goat cheese

Marinade and Dressing Ingredients

  • 2 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • 1/2 cup balsamic vinegar
  • 3/4 cup olive oil
  • 1 tbsp rosemary, chopped
  • 1 tbsp oregano, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare Marinade/Dressing: In a bowl, whisk together minced garlic, Dijon mustard, balsamic vinegar, olive oil, rosemary, oregano, salt, and pepper until fully combined. Reserve 1/2 cup of the dressing for drizzling over the salad later.
  2. Marinate the Steak: Place the flank steak in a large ziplock bag and add the remaining dressing. Seal and refrigerate for at least 2 hours or up to overnight to allow flavors to penetrate the meat.
  3. Grill the Steak: Preheat your grill to medium-high heat. Remove the steak from the marinade and grill for approximately 5 minutes on each side, or until the internal temperature reaches 140°F for medium-rare doneness. Cooking time may vary depending on steak thickness.
  4. Rest the Steak: Remove the steak from the grill and let it rest on a cutting board for 10 minutes to allow the juices to redistribute for optimal tenderness.
  5. Assemble the Salad: In a large bowl or platter, layer the arugula, sliced peaches, avocados, and grilled corn. Thinly slice the rested steak and arrange on top. Sprinkle goat cheese evenly over the salad.
  6. Dress and Serve: Drizzle the reserved half-cup of dressing over the assembled salad to finish. Serve immediately and enjoy!

Notes

  • Marinating the steak overnight enhances flavor and tenderness.
  • Use ripe but firm peaches for best grilling results.
  • Resting the steak after grilling is essential to retain juices.
  • Adjust seasoning of dressing to taste before marinating.
  • This salad can be made with other cuts of steak if preferred.
