Description

A creamy, high-protein tomato soup enriched with cottage cheese and fresh herbs, offering a nutritious and comforting meal. This recipe combines classic tomato flavors with the added benefit of protein for a satisfying dish that’s perfect for any season.

Ingredients

Soup Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion (finely chopped)
  • 6 cloves garlic (minced)
  • 2 28 oz cans peeled tomatoes
  • 5 cups vegetable broth
  • 2 tsp sea salt
  • A pinch black pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 cup basil (finely chopped)
  • 4 tbsp tomato paste
  • 1 1/2 cups cottage cheese
  • Fresh basil (chopped, for garnish)

Instructions

  1. Sauté Aromatics: Place a large pot over medium-high heat and add the olive oil. Once hot, add the finely chopped yellow onion and cook for about 5 minutes until the onion becomes translucent and soft, developing a sweet base flavor for the soup.
  2. Add Garlic: Add the minced garlic to the pot with the sautéed onion and cook for another 30 seconds, stirring frequently to release the garlic's aroma without burning it.
  3. Combine Remaining Ingredients: Add the peeled tomatoes (with their juices), vegetable broth, sea salt, black pepper, oregano, thyme, finely chopped basil, and tomato paste to the pot. Stir everything together and bring the mixture to a gentle simmer. Let it cook uncovered for 15-20 minutes to allow the flavors to meld and the soup to thicken slightly.
  4. Blend Soup with Cottage Cheese: Remove the pot from heat. Pour the soup in batches into a blender, adding portions of the cottage cheese to each batch, and blend until completely smooth. This may require two or more batches depending on your blender size. Alternatively, use an immersion blender directly in the pot to blend all ingredients including the cottage cheese until smooth and creamy.
  5. Garnish and Serve: Ladle the blended soup into bowls and garnish with freshly chopped basil. Serve warm to enjoy the creamy, protein-packed tomato soup at its best.

Notes

  • To speed blending, use an immersion blender directly in the pot.
  • For a thinner soup, add a bit more vegetable broth as needed.
  • Use low-fat or regular cottage cheese depending on your preference.
  • Fresh herbs enhance the flavor but dried can be substituted if necessary.
  • Adjust salt and pepper to taste before serving.
