Description

This Higher Protein Pumpkin Chia Pudding is a creamy, nutrient-dense breakfast or snack option that combines the seasonal flavors of pumpkin pie spice with the power of protein powder and chia seeds. It's easy to prepare, naturally sweetened with maple syrup, and perfect for those looking for a filling, nutritious treat with a boost of protein.

Ingredients

Dry Ingredients

  • 1/3 cup chia seeds
  • 3 tablespoons vanilla protein powder
  • 1 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt

Wet Ingredients

  • 1 1/4 cups milk of choice
  • 1/2 cup pumpkin puree
  • 1/3 cup Greek yogurt
  • 1 tablespoon maple syrup

Instructions

  1. Whisk dry: In a mixing bowl, whisk together the chia seeds, vanilla protein powder, pumpkin pie spice, and salt until there are no clumps of protein powder remaining and the mixture is evenly combined.
  2. Whisk wet: Add the milk, pumpkin puree, Greek yogurt, and maple syrup to the dry ingredients. Whisk thoroughly until the mixture is smooth and uniform. Let it sit for 5 minutes, then whisk again to break up any settled chia seeds.
  3. Set in fridge: Cover the bowl and transfer it to the refrigerator. Let the pudding sit and thicken for at least 1 hour, or preferably overnight for best texture and flavor development.
  4. Stir: After chilling, stir the pudding well to ensure all ingredients are evenly combined. Taste and adjust sweetness, adding more maple syrup if desired.
  5. Serve: Serve the pudding topped with additional Greek yogurt, whipped cream, diced apples or banana slices, and crushed nuts for added texture and flavor. Enjoy immediately.

Notes

  • Use any milk of your choice such as dairy, almond, oat, or soy milk depending on dietary preferences.
  • For extra creaminess, you can substitute some or all of the milk with coconut milk.
  • Adjust the sweetness to your liking by adding more or less maple syrup.
  • This pudding can be stored covered in the refrigerator for up to 3 days.
  • For a vegan version, use plant-based protein powder and non-dairy yogurt.
